Easy Omelet in a Bag

Really awesome way to cook an omelet without the mess whilst camping! MAKE SURE the bag has a good, airtight seal-we had some water leakage with one bag but the other bag turned out perfectly!

Fire Side Coffee

Pretty good, it actually does need some sugar through. I added it to taste but next time will incorporate it in the mixture. I also used decaf coffee and mint chocolate hot cocoa. Really nice around a campfire and with a hit of bourbon in it :)

Eggplant Croquettes

absolutely delicious. Cooking them was a bit of trial and error, we started off setting them in a pan of oil and baking them in the oven. Then we drained the oil and continued baking so they could get nice and crisp. Next time, we will pan fry them first and then finish off in the oven.

Sweet and Sour Drumettes

This was really, really good. However, I used one reviewers advice (beanie) and omitted the water, did 3 tbl of vinegar, 1/2 cup of honey, and 1/2 cup of sugar. I too added 1 heaping tablespoon of asian chili garlic sauce. I don't know if it's because I love heat and garlic but this nailed it for me. Next time I make this I am going to go lighter on the sweet stuff and heavier on the garlic/heat.

Easy Garlic Broiled Chicken

I used two bone-in chicken breasts for this which worked out fine. I kept the skin on too. The only thing I did differently is that I used rosemary instead of parsley only because (shocker) I didn't have parsley at the time.

Fish Roll-Ups

Extremely simple to make and tastes like gourmet. The lemon juice is so important and brings out the flavors sooo well. I added to the crab mixture though; some worcestershire sauce and tabasco sauce. I've tried it with sauteed peppers and onions and it was amazing. I will say that I didn't do the 2/3 cup of butter that the recipe asked for..I did maybe 3 tablespoons which works fine.

Lentil Soup with Lemon

ATTENTION LENTIL SOUP LOVERS! Try this recipe! I make this recipe at least once a month ( I double it and freeze some for later) and it's better each time I make it. Everything is important from the amount of carrot to the dash of chili powder at the end...don't cut corners! This soup is amazing the way it is.

My Husband's Pad Thai Noodles

I was okay with this recipe. My husband and I have been searching far and wide for a grade A pad thai recipe. This was okay but we both felt it was missing something. Tamerind? I am unsure. I prepared it exactly as directed except I used a 16 oz package of the rice noodles which works out pretty good if your not crazy about a whole ton of sauce.

Emily's Famous Hash Browns

We make these hash browns at least once a week, usually after a long night of indulgence. We do add some slices of fresh peppers if we have them though. Also, adding a slice of cheese to the top on the final flip is highly recommended!
