Smoked Oyster Spread

It's true you have to like smoked oysters to like this recipe. I just couldn't get into it. I took the spread to a patient of mine who I thought might enjoy it, and now he has me making it for him all the time! So, for the smoked oyster lover, it's a winner. Note: he tops his off with a little hot sauce.

Zucchini Cobbler

Fooled my 14 yr. old... and she hasn't had a vegetable pass her lips since she could SAY "vegetable"... I'm not telling her. Everyone loved it!

Easy to Make Ginger Cookies

These are a perfect way of getting ginger-root into my 3 yr. old. (Ginger-root keeps her from getting carsick.) We cut these with little heart-shaped cutters and dipped the topsides in sugar before baking. (Lots of fun for my little helper!) I had to hide some because everyone else in the house was eating them! Oh, these freeze nicely and thaw quickly.

Squash Pie

Excellent! I used 3/4 tsp. pumpkin pie spice instead of measuring individually, and lightly dusted the top with a little nutmeg. My family loved it! I didn't expect them to even try it because they refuse squash in every other form.

Zucchini Cobbler

I used part brown sugar as others suggested, and pumpkin pie spice as I'm out of nutmeg. I insisted my 14 yr. old try my new "Apple Crisp" -keep in mind, this is the pickiest eater on the face of the earth!- and she loved it! She actually gave me a hug and said, "Thank you for making me try something new. I will never doubt you again." (Til next time, right?) I will never reveal it's not apple! I think this is the first vegetable other than potato to pass her lips since she was five! Thank you so much for this recipe :)

Banana Bread V

Excellent banana bread! Very easy to adjust to personal preferences for taste or dietary needs; turns out yummy no matter what you do to it! I bake mine at 350 for a half hour, turn down to 325 for a half hour, then turn oven off and go to work. When I get home it's perfect and cooled enough to eat. Mmmmmmmmm :)
