Simple Scones

So far I've made Orange Cream Scones, Key Lime Scones, and Vanilla Bean Scones using this recipe! These scones always turn out perfect! I love love this recipe. I have never used sour cream but instead yogurt. I've used orange, key lime, and greek vanilla yogurt to make my scones. Such a great starter recipe to branch off from and create any type of scone to your liking. I love making a glaze for them as well. Powdered sugar (1 cup) and key lime juice along with zest was delicious on top of my key lime scones!

Applesauce Bars

These bars were simple to make and very moist. I added the vanilla frosting and wow it really made the bar delicious. Alone the bar was still good just not as exciting ;-). Confectioners' sugar on top would be another great alternative.

Cathy's Banana Bread

I've been making this for years and it always turns out wonderful. I always use light sour cream and add extra banana. I like to make them in a muffin pan so that I can easily freeze for quick snacks. Note: Freeze quickly before everyone gobbles them up, lol. Today I added 1/2 cup mini chocolate chips for the kids. YUM!

Incredibly Cheesy Turkey Meatloaf

Great recipe! Kids loved it. Husband loved it. My mom loved it. So I know it was a winner. I adjusted the amount of milk, bread crumbs, and cheese since I didn't have a full 2 pounds of meat.

Sour Cream Coffee Cake III

This recipe was great. I used only 1/2 cup of butter. I also replaced half of the sour cream with some plain greek yogurt I had. The results were great with the changes I made. I always like to reduce fat in recipes if possible. We added fresh blueberries to half of the cake for those who like them. Will make again. Oh one more thing I made this in a spring form pan and had to bake for about 55 mins.

Asian Lettuce Wraps

Made this dish tonight and everyone loved it! I had a hard time finding some of the ingredients at the store but I'm glad I did and now I'll have them for the next time. Really quick and easy to make. It took me about 20 mins to put together. Oh I didn't add the pickled ginger but instead just added a dash of ground ginger.

Chicken, Garlic, and Sundried Tomato Pasta

The whole family loved this one! I was so excited to see my 8 yr old give me a thumbs up while my 5 1/2 yr old was diving right in. Our 1 yr old even approved LOL! I did two modifications to the recipe. I used 12oz of pasta instead of the full 16oz and I only used 6 Tbsps of butter instead of a 1/2 cup. Next time I might add a little wine. When my husband wants seconds I know the recipe is a keeper and I add it to my monthly meal planner. Thank you!

Best Ever Corn Muffins

Just made these and they turned out really good. I made changes like others suggested. Lowered sugar to 7 tbsp. Lowered bisquick to 1 1/4 and then increased the corn meal to 1/2 cup. Lowered the vanilla to 1 tsp. I know it sounds like a lot of changes but really it was just tweaking it a bit so the sweetness would come out right. I made 6 large muffins and then 24 minis for my kids bento lunches :-).

Tiramisu Layer Cake

Absolutely delicious! I just made this for my husband and he loved it. He likes Tiramisu to taste light and fluffy and this turned out just right. I made 2 coffee layers and 1 white layer in the middle. I'm going to post a picture as well. My best looking cake so far! Thank you for a great recipe!

Soft Oatmeal Cookies

Love them! Added only 1/2 cup white sugar instead of the full cup. I scooped them out in round tablespoons and then lightly pressed each one down to get a nice even baked cookie. Average cook time for me was 9 minutes. They were very soft!

Banana Chip Muffins I

These turned out great! I was a little confused as to why we would need 1 Tablespoon of baking powder so I just used 2 tsps and that worked out fine. Added the additional 1/4 cup milk and added 1 tsp of vanilla. Great recipe and quick to make.

Downeast Maine Pumpkin Bread

Wow! Great Bread! Made muffins too for the kids. Super moist! I replaced half of the oil with applesauce and you can't tell at all. I also used 1 cup white sugar and 1 cup brown sugar and you don't miss out by only using 2 cups rather than 3. Definitely my new Pumpkin Bread recipe! Thank you.

Oatmeal Peanut Butter Cookies

Great Recipe! Love it! I used 1 1/2 cups PB, 2 1/2 tsps baking soda, and 2 cups of oats per other reviews. I love peanut butter and chocolate so I added some Nestle Chocolate Chunks, 1 1/2 cups! I like my cookies a little bigger so I used a cookie scoop that I have and it's more like an oversized Tablespoon. I then pressed each round Tablespoon down with a cup so they would stay consistent in thickness. They turned out so good! Going to freeze half of them for school lunches. Thank you for a great recipe!

Cheese and Broccoli Chicken Soup

Love this soup! Too much salt the first time I made it. This time I used 6 cups of water and 5 cups of low sodium chicken broth. I personally like to make my roux and then add the broth (cold) right to it. I added about 3 cups of the broth to it and continued stirring until it thickened. Then I added the cheese. After all the cheese was melted and the consistency was thick I then transferred into a large pot that already contained the brocolli, remaining broth and water. Didn't add chicken the 2nd time around but just didn't want it in there this time. May add potatoes next time. Great recipe!
