Cajun Corn and Crab Bisque

Reviewed: Feb. 3, 2014
Oh this is sooo yummy! I made it with imitation crab to save on cost and crossed my fingers it wouldn't come out horrible. But it's so delicious even with the fake stuff! I couldn't find liquid crab boil but was able to find the stuff that comes in the boil packets, so I grew that in there while it cooked and just removed the bag and squeezed out the excess liquid before serving. I did not have Cajun seasoning on hand so I used Old Bay and added some cayenne. Obviously I did some of my own tweaking out of necessity, but it still came out fabulous! It reminds me a lot of the crab bisque we sometimes get from Zoup--but even better flavor to the bisque! Yummy!

Garlic and Parmesan Dinner Rolls

Reviewed: Nov. 3, 2013
Omg! These are amazing! I was in search of a recipe that was just like the garlic cheese rolls I used to get from the school cafeteria and this is it! Anything involving yeast is always a bit of work, but this is worth it! Anything I've ever tried to make with yeast has never turned out right so I was so nervous but these came out great! To save on time next time I will use premade pizza dough...but I'm sure it won't turn out as good. These are great!

Savory Slow Cooker Beef Tips

Reviewed: Oct. 10, 2013
This was very good. Even the super picky 5 year old ate it. I had to tweak it a bit because of what I had on hand, however. I used 4 sirloin steaks and had to replace the ginger ale with cream soda because that was what I had on hand. It came out a bit sweet, but no one noticed except me--I think it was only because I knew I had substituted the cream soda. It was very tender and still had a nice hearty flavor with a gravy consistency, and made a lot. We used the extra gravy over rice. With the substitutions I would rate it 4 stars, but I would definitely make this again with the right ingredients and I think it would be 5 stars.

Flourless Peanut Butter Cookies

Reviewed: Dec. 15, 2011
These were really good. Added 1 tsp. of vanilla and doubled the recipe. Got 26 medium-larger size cookies out of the doubled recipe. Ended up cooking them for way longer than it says--about 20 minutes in all. They never looked done. Came out great though--slightly crunchy on the outside, and chewy on the inside. They were a little more sugary than a real made-with-flour cookie and more sweet than rich, but I would still definitely make again if we get a craving and don't feel like making the "real thing".

No Bake Cookies III

Reviewed: Sep. 27, 2011
These pretty good. They came out a lot sweeter than I'm used to though and had more of a sugary taste than a chocolate/peanut butter taste. I will still make them again, but maybe use less sugar next time.

Real Welsh Rarebit

Reviewed: Aug. 31, 2011
I grew up eating this made with all milk and yellow mustard. I wanted to try this to see how different it would come out. Although I thought it was a good recipe, I think it would have been better without the beer, or maybe a lighter type. I used a toasted nut lager, which I thought would be good. My husband and I agreed it ended up tasting overpoweringly like beer. I also ended up adding about a teaspoon of yellow mustard which made it slightly better. It's good, but I think we just prefer it without the beer and more mustard.

Dirty Diapers

Reviewed: Aug. 28, 2011
These were pretty good. I made them for my sister's baby shower. It was definitely a lot of work and I had trouble getting any meat to actually fit in the crescent roll. But I do have to say that I doubled the recipe and there were only 3 left after everyone ate, so everyone must have liked them. I definitely wouldn't make them just for at home, but maybe for another shower, since it was a cute idea.

Tater Tot Casserole II

Reviewed: Aug. 28, 2011
I made this for my sister's baby shower ("Tot" casserole!) and it was a hit! It was all gone between only 7 people. I baked it in a stoneware dish for the full hour and it was just right. Next time I'm going to try adding ground beef or chilli and having it as a meal through the week...Not the healthiest, but it is really good!!

Vicki's Hush Puppies

Reviewed: Jul. 31, 2011
OMG. I just consumed way more hush puppies than any one person should eat! I was worried because I didn't have self-rising flour or cornmeal, but I just added 2 Tbs. of baking powder and 1 tsp. of salt and they came out just fine. I also didn't even have onions on hand, so I had to substitute about 1/4 c. of dried chopped onion. Worked great! They really do taste like the kind you get in the south. I put in not quite half a cup of sugar and probably would add a little less next time, but they were still great. I accidentally fried the first few a little too long and they came out a bit dry. Next time I will take them out when they're more golden than brown. I can't wait to make these again for company and add jalapenos!!

Alfredo Sauce

Reviewed: Jul. 21, 2011
I like that this recipe is easy, and it did taste good, but I was not a fan of the consistency. The parmesan did not melt well and left kind of a grainy consistency. I like my sauce much smoother than this came out. I also added milk as this came out super thick after I added the cheese. I prefer the Quick and Easy Alfredo recipe from this website, but taste-wise after tweaking, this is a close second. I will probably make again if short on time.

Guacamole

Reviewed: Jan. 29, 2011
Best guac EVER! Had some chips leftover from mexican dinner last night and had nothing to put on them, so decided to make this. Used 1/2 can diced tomatoes, 3 tbs dried minced onion, and 1 1/2 tbsp dried cilantro since those were what i had on hand. Also added a few chopped pickled jalapenos--we like spicy! Didn't wait an hr. before tasting and it's already excellent!! Can't wait to eat more later after it's gotten a chance to sit a little while.

Hot Chocolate Pudding Cups

Reviewed: Nov. 29, 2010
Yummm. It's a little involved, but I'd say pretty worth it. I only had milk chocolate chips on hand and salted butter, but it still came out excellent. It came out a lot like a hot fudge consistency. We didn't have whipped cream, so we put a small scoop of vanilla ice cream on top. Sooo delicious.

Rempel Family Meatloaf

Reviewed: Nov. 7, 2010
I'm not a big fan of meatloaf, but this was very good. My grandfather requested meatloaf for his birthday dinner and I wanted to make one that was really good--and this did the trick. Not a lot of people in our family are meatloaf lovers, but I got lots of compliments on this. Just about everyone went back for 2nd helpings and my husband had 3rds. Since I was serving 10 people I doubled the recipe and shaped the loaf myself, putting it on a cookie sheet to bake and covered with foil. I took the foil off and cooked for another 15 minutes at about 400 degrees to brown. It held its shape really well even when cut, and had just the right amount of moistness when we ate it. At the end of dinner there was only about 1/8 of the loaf left!

Potato Chips

Reviewed: Sep. 26, 2010
The taste is great and it's an easy recipe, but way too time consuming. I too ended up with the cooking time being about 10 minutes. I used about 4 large potatoes cut paper thin with a madolin and wasn't even close to being done when on the third plate my microwave got overheated and gave out. Ended up resorting to just deep frying them. I d like that this is much more healthy that frying and they taste just like restaraunt chips, but probably better suited if you just get a hankering for yourself.

Oatmeal Raisin Cookies I

Reviewed: Sep. 23, 2010
BEST oatmeal cookies ever! I have no idea why people would give this recipe a bad review. I think they must have done something seriously wrong or have been baking on terrible cookie sheets. I've made these twice so far and each time they came out perfect! Slightly crunchy outside and chewy inside--delicious! The first time I followed the recipe to a tee and of course, they came out good. The second time I made them I only had margarine and not even quite enough. I also lost track of how much oats I put in, so I think I screwed that up too. And after THAT I ended up putting everything together in the wrong order. I was sure they weren't going to turn out, but they tasted great, if not better! Just in case you haven't baked a cookie of this consistency before, it's better to let the cookies slightly cool before removing it from the cookie sheet, otherwise, they may break while you try to remove them...but that's nothing new. Also, I use a stoneware baking pan to bake cookies on, but I'm not sure if that necessarily makes them turn out any better. So glad for this recipe and this is my new favorite cookie!

Jo Jo Potatoes

Reviewed: Sep. 7, 2010
These were pretty good. I made them when I had family over for dinner. I was skeptical at first because my first batch I cooked for about as long as the recipe says and they came out a bit undercooked in the middle. The breading reminded me of fried chicken batter, which I did not expect. They also lacked salt, so I added some to the mixture and it was much better. The next batches I ended up cooking for probably about double the time and they came out much better. They actually tasted better after they sat for a while, but everyone said they liked them in the end. They came out much like potato wedges you'd get at a deli or convenience store. Probably make them again if we get a craving.

Broiled Tilapia Parmesan

Reviewed: Aug. 31, 2010
Not like this recipe even needs more positive reviews, but I just had to add my 2 cents--OMG, delicious!! I've been doing a low carb diet, so this was perfect. I am NOT a fish eater, but I loved this. The sauce is really what makes it so good. This sauce would probably be good on anything. I used some of it over the broccolli we had with dinner and it was fabulous. I love how it's so easy to make, but tastes so impressive!

Four Cheese Macaroni

Reviewed: May 17, 2010
THIS IS SOOO GOOD! I am not a fan of mac and cheese at all and I loved this! It is just the right amount of richness and creaminess. I used margarine because I had no butter on hand and used 8 oz. of montery jack, 8 oz. of Velveeta, and the rest was a Mexican blend of shredded cheese since that's what I had on hand. Fantastic and will defnitely keep this one around!

Savory Biscuit Bites

Reviewed: Apr. 14, 2010
Just made these a few minutes ago. They came out great for such a simple recipe. I was out of parsley but added about a tsp. of Italian seasoning and I think it added some good flavor. I used a can of Pillsbury Buttermilk bisuits, but I think next time I'll use Grands or some other fluffier biscuit just to see if they could come out even better. Will definitely make again.

Greek Style Potatoes

Reviewed: Feb. 19, 2010
Maybe these just weren't my taste, but I did not like these at all. I thought the rosemary was way too strong and there was way too much liquid. I'm giving 2 stars because my family didn't complain about eating them, but they didn't rave about them either. We pretty much all agreed they had a very "different" flavor...not the "different" that I was looking for though.
