Easy Platz (Coffee Cake)

I certainly hope you read the reviews BEFORE you put this in the oven in the specified 9 in. square pan!! That's where mine is now, and I am thinking we'll be having this for lunch, since, apparently, breakfast will be long over by the time this coffeecake is baked through! Isn't there a way to revise this recipe so that it's correctly written? So far, I would characterize this a baking mishap, regardless of how it turns out.

Chicken Kabobs Mexicana

I added minced garlic to the marinade, used 1/2 tsp. of cumin instead of 1tsp., and used dried cilantro, since that was all I had on hand. Also, I brushed the skewered vegetables with olive oil and seasoned them with a bit of sea salt, garlic powder, and fresh ground pepper. This was a really delicious and easy meal. The chicken was excellent, moist, and tender. Veggies were delicious. I did skewer each food separately, e.g.,, red pepper on one skewer, chicken on another skewer, to allow for variability in grilling times for each.

Spicy Shrimp Tacos

The idea of this was appealing, and the shrimp, fruit, and cilantro were fresh and tasty on their own, but their combination was kind of underwhelming. In comparison, the Sriracha sauce was fine but overpowered the more delicate main ingredients. Not a keeper.

Spinach Basil Pesto

I had never made pesto before, and this was surprisingly easy, fresh, delicious. I used an immersion blender to "process" the ingredients. Made clean-up a snap. Recipe yields enough to save/freeze leftovers for other meals.

Simple Scones

These are quite good. I eschewed both the cheese grater AND the food processor and instead used a pastry cutter to cut the cold butter pieces into the flour mixture. Quick, easy to do this way. I added chocolate chips (instead of raisins) for my husband, who loves chocolate chip scones.
