My Mom's Apple Sauce Cake

I give this 4 stars because I made some changes to the recipe. I used whole wheat flour instead of all-purpose and butter instead of shortening (just my preference). I did not add nuts and raisins and I used store-bought white frosting. This was a delicious spiced cake - a big hit with the husband and 2-year-old!

Chocolate Chip Banana Muffins

These are truly delicious. Very sweet and more of a dessert than a breakfast but so moist and tasty you'll want to eat them all day!

Mexican Bean Pie

I made this without the olives, bell pepper and jalapeno pepper because I didn't have them on hand and don't really like them anyway. I also used frozen corn instead of canned corn. It was delicious and had my meat-eating husband raving about what a good meal it was.

Banana Oatmeal Cookies I

These were OK. I think maybe bananas don't belong in cookies. I love banana muffins, bread, etc. but in cookies it just made them too puffy and soft without enough sweet flavor.

Apple-Raisin French Toast Casserole

This was a big hit at my Christmas Day brunch. I followed the reviews that suggested getting Pepperidge Farm Brown Sugar Cinnamon bread and cubing it. Also skipped the raisins based on personal preference. Use lots of apples! I thought it would be too much, but could have used more.

Super Duper Zucchini Muffins

Very yummy, but a little high in sugar for a breakfast muffin in my opinion. I may try it again with less white sugar and skipping the brown sugar altogether. Great taste from the zucchini (I used shredded apple too based on a review) and cinnamon/nutmeg.

Microwave Baked Potato

This is very yummy, especially if you follow the advice of wrapping the potatoes in plastic wrap before microwaving and cutting the cooking time to 4 minutes on each side. Quick, easy and delicious.

Baked Ziti II

This is a very simple ziti recipe that was a big hit at my daughter's birthday party. I've had lots of ziti dishes and this is as good as any (at least when it comes to meatless varieties). Simple and good.

Easy Turkey Gravy

I needed some gravy for leftover turkey and mashed potatoes, but didn't have any drippings, so this fit the bill. I didn't need a full batch and I didn't have any turkey stock, so instead of the 5 cups turkey stock I used 3 cups water with 3 chicken boullion cubes. I still used the full can of cream of chicken soup, which I think made for a thicker gravy. I also added some Gravy Master for browning and corn starch to thicken a little more. My husband loved it!

Fluffy White Frosting

The Ultimate Chili

This is a great chili recipe. I follow it pretty closely, but I cook the beef with some chili powder, cumin and onions to give it more flavor. I've made it several times and my husband says it's the best he's had.

Baked Pork Chops I

I prepared this while also feeding my 10-month-old so I totally blanked and forgot the garlic salt and seasoning salt. By the time I remembered they were already breaded, fried and in the oven. I thought they wouldn't be any good, but they were actually very good, even without the seasoning (although I will season them next time). My husband said this is the kind of meal he would brag about at work! I did use 2 cans of cream soup based on some of the reviews, but really thought we would have only needed 1 can next time. This is a great way to make pork chops.
