Pickled Pepper and Onion Relish

I made this recipe and after sampling it wished I had only put 2 T of pickling spice in it. Way too much corriander seed, so it overwhelmed the star of the recipe...peppers and onions! To save the relish I added 3 cups of diced cherry tomatoes. For a great dip, mix the altered relish with cream cheese and serve with crackers or tortilla chips.

Ham, Potato, and Cheese Soup

Oh so yummy. The taste is heaven! I didn't need to use any flour, but did need to reduce the Valveeta by 1/4. Enjoy....it's DANG good.

Colonial Pumpkin Bars

This recipe is easy and tastey. I even served it w/o the frosting (to reduce the fat). Instead I just sprinkled on a couple TB of a yellow cake mix. This recipe also works with oil instead of butter.

Buckeye Balls I

Quick, easy, and the lowest amount of butter I found for this taste. Don't listen to how to melt the chocolate! Melt your choc chips in a metal bowl over a low boiling pot of water (constantly stirring). Enjoy.

French Toast Casserole

Made a double batch, 6 eggs and 2 1/2 cups milk instead and buttered bottom of dish instead of top. Used vanilla bean paste for added decadence and sprinkled top with cinnamon sugar to get a crust.

Honey Cornbread

Yummy. I substituted milk for cream (1 cup) and added 1/4 cup sour cream. I also added 1/2 t sea salt. It only took my muffins 17 minutes to bake, so watch the time.

Bean Soup

Excellent Recipe to START with. I needed a lot (4 Tb more) of salt than called for. I also added 1 1/2 Tb of ground Corriander to add a sweet wonderful flavor to it. Note: if you're trying to cut down on the fat grams, make sure you take out the bone after 1 1/2 hours to cut off excess fat.

Bread Maker Doughnuts

I lost my famous bread maker donut recipe and this one was the closest one to what I remembered. Substituted half the butter for extra milk. (Why have extra fat, right?) The dough was supple, pliable and was perfect with 1 tsp vanilla bean paste added. Very flavorful dough because of the extra salt and sugar. My company responded with "You should sell your donuts, Jen."

Chocolate Mint Cookies I

This was a very dense, rich chocolate cookie recipe, even with half the chocolate chips. So I used 1 cup choc chips instead of 2 for the melted ganache and substituted 1/4 cup cocoa for part of flour. I added mint m&ms instead do Andes mints on top. Baked for 8 minutes yielded a tough cookie...6 minutes was perfect for me.

Baked Chicken Nuggets

I brined my chicken for 3 hours before baking (2 t sugar, 2t salt) to give the chicken extra flavor and tenderness. I used half Panko bread crumbs and half italian. It only took 6 TB of butter. The taste was perfect. It fed 6 people.
