Buckeye Balls I

Quick, easy, and the lowest amount of butter I found for this taste. Don't listen to how to melt the chocolate! Melt your choc chips in a metal bowl over a low boiling pot of water (constantly stirring). Enjoy.

Bean Soup

Excellent Recipe to START with. I needed a lot (4 Tb more) of salt than called for. I also added 1 1/2 Tb of ground Corriander to add a sweet wonderful flavor to it. Note: if you're trying to cut down on the fat grams, make sure you take out the bone after 1 1/2 hours to cut off excess fat.

Slow Cooker Scalloped Potatoes with Ham

Not as good as "funeral potatoes" but still full of flavor and easy to make. Note...you may need to increase cheese by 1/3 cup.

Colonial Pumpkin Bars

This recipe is easy and tastey. I even served it w/o the frosting (to reduce the fat). Instead I just sprinkled on a couple TB of a yellow cake mix. This recipe also works with oil instead of butter.

Absolutely LOVED them. This recipe has the fewest fat grams and is still wonderful. I used corn flakes and the crunch from them made this cookie one of my top ten.

Oh so yummy. The taste is heaven! I didn't need to use any flour, but did need to reduce the Valveeta by 1/4. Enjoy....it's DANG good.

Banana Chocolate Chip Cookies

Annie's Fruit Salsa and Cinnamon Chips

Ever since I tried this recipe, I can't get enough of those Cinnamon Chips! As for the Salsa, I used frozen raspberries and instead of strawberries, I used diced pineapple. The beauty of this recipe is you can mix and match different fruit combos! You don't need jam either.

Pickled Pepper and Onion Relish

I made this recipe and after sampling it wished I had only put 2 T of pickling spice in it. Way too much corriander seed, so it overwhelmed the star of the recipe...peppers and onions! To save the relish I added 3 cups of diced cherry tomatoes. For a great dip, mix the altered relish with cream cheese and serve with crackers or tortilla chips.
