Microwave Oven Peanut Brittle
just made this and it came out perfectly. I took some of the suggestions: I cooked it for 4 minutes without the nuts because I was using roasted, then 1.5 minutes with the nuts then 1 more minute with the butter and vanilla. The only suggestion I wouldn't use again is to warm up the pan before spreading, I thought I ruined the batch when it seem to keep cooking on the warm pan. I also used a silpat sheet and then put the whole pan out in the snow to cool it down and it was ready to eat in 10 minutes.

Gingerbread Men
I made a test batch for our work Christmas cookie swap, and they were a total hit! The only suggestion was to ice them to make them even better. The butterscoth gives them a great flavor without being too "spicy" - I don't normally eat gingebread because of that reason. Great recipe! Definitely a keeper for future swaps!

Pignoli Cookies I
My mom used to make these cookies when I was younger. Of course, I couldn't find the recipe when I wanted to make them - but thank goodness I found this one! They come out just like I remember them. I like to make my cookies a little bigger, so I only got about 2 dozen out of the recipe. Also, the dough seemed a little to soft, so I added some extra confectioners' sugar. Putting the dough in the fridge for a while makes them easier to handle. These cookies are delicious!!
