About this Cook
Urban farmer; My wife and I have 10 chickens of various breeds, and most of our yard is used for gardening. We are trying to improve our community through healthy urban grown foods, and great recipes. We live in a food desert, so the more we grow local the less we have to drive to get.
My favorite things to cook
INDIAN, my father grew up in Mangalore India, and my mother was from Hungary. I grew up with what I call - Hungarian Curry. Flavor filled but not spicy. Now my father visits me and we turn up the heat on some of my child hood favorites. and try making dishes from when he was back in India.
My favorite family cooking traditions
Tons of chutney and fresh fried food to serve it with. Get a house filled with people and everyone making passes through the kitchen.
My cooking triumphs
Fist time catering, was for my wife's board of directors (local non-profit) and they not only complimented the food, but asked what restaurant the food was from.
My cooking tragedies
Made a simple curry sauce, when i was sauced. 12 TBS of turmeric does not make for a good sauce. when you are cooking for two.

Easy Chicken Taquitos
Great flavor and easy to make. I decided not to use the canned chicken we have fresh in our back yard. After a little plucking and some knife work, I took my fresh chicken breast, seared it in cast iron and tossed it in the oven. After baking the chicken breast we shredded the meat and returned it to the pan, added 1 cup of water and diced chipotle peppers. slow cooked until tender and added it to the tortillas. Spicy, fresh and so simple to make. Only down side to the way I cooked, it does take more time to get the meat slow cooked and shredded.
