Whole Wheat and Honey Pizza Dough

Reviewed: Jan. 18, 2008
i loved this dough. It was easy to work with and roll out and it baked up nicely in the oven. The only thing i would make sure i do next time (this was my fault) is i should have baked the pizza crust before i put the toppings on because the sauce made the dough soggy even after it was baked. The dough had good flavour though i will just make that change next time. AND I LOVED THAT IT'S SO HEALTHY :)

Chicken Cordon Bleu I

Reviewed: Jan. 13, 2008
I wasn't a huge fan of this recipe. It needed something. Maybe a sauce wrapped up inside with it because i found it quite tasteless. I cooked for the time listed but it came out dry. I will try again with more flavour because it's so easy and makes wonderful presentation but it's kind of bland.

Alfredo Light

Reviewed: Jan. 7, 2008
This was good but needs more spices. We added 3 cloves of garlic and it still did not give it enough flavour. The sauce was also slightly too thin. You can probably fix this problem by just adding slightly less liquid; maybe 1/4 cup milk. I will make this again but i will get creative with my spices and probably add fresh mushrooms :)

Focaccia Bread

Reviewed: Jan. 5, 2008
mmmm this was SO good! i made the dough in the bread machine and only had marble cheese in the house so i used that instead of the mozerella. It was still so good and so easy! i will definatly make it again! UPDATE: i made this again but added half a teaspoon more yeast. Ths allowed the bread to rise a little more and get a little thicker but it still kept the right texture of typical focassia bread. EXCELLENT. This is how i will make it from now on.

Overnight Caramel Pecan Rolls

Reviewed: Dec. 29, 2007
These were SO good! i made these for christmas day breakfast and i used my bread machine to make the dough. The end result made a very pretty presentation and it was tasty as well! My only piece of advice is to make sure you only keep the pan inverted for the 2 minutes it states. I left it for about 10 and the rolls started sticking to the pan. I will definatly make these again for company!

Nanaimo Bars III

Reviewed: Dec. 27, 2007
These were fantastic!! i have always loved the store bought ones but everytime i had tried to make them, the bottom layer was too dry or there wasnt enough chocolate to cover the top. This recipe had the perfect amount of ingredients and it came out excellent. After stealing a piece of store bought naniamo bar christmas eve, i was shocked that it didn't even compare to mine! MMMM will defininatly make again :)

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Dec. 27, 2007
i thought this recipe was very yummy. It did not take a lot of time to prepare and it was very simple. I loved that it was a healthy dish that actually tasted good! the chicken came out moist and tender instead of dried out. My only complaint is that it could have used more spices. I added a few pinches of greek seasoning to it as well but it still could have used more flavour. Overall, great recipe and will make it again!

Chocolate Covered Cherries

Reviewed: Dec. 19, 2007
Exellent! Very time consuming but i was suprised at how pretty they looked on my first try. A few tips: spray your hands with cooking spray to keep it from sticking to the white dough. Also once you have wrapped the cherries, freeze them before dippng them in chocolate. Makes them so much easier to dip. To dip them, i found it easiest to use a different toothpick for each one. I put the toothpick in them, rolled them in the chocolate and placed them on a cookie sheet with the toothpick still in. I put them in the freezer again and then removed the toothpicks. I found it was easier to make them stay up this way and most of the chocolate got covered and looked quite pretty. Much more chocolate is also needed then it calls for. Overall, very time consuming but so tasty!i probably won't make them again for a long time as i dont have that much time to devote to making food...

These are fantastic! I used half applesauce and half margarine and you would never know the difference! i also used half a cup more chocolate chips! They could definatly use more coffee though as you can't really taste it. 3 tablespoons would be great:) MMMMMMMMM sooo good! will make these many more times:)

Eggnog Fudge

Reviewed: Dec. 11, 2007
This is quite good and different! After reading the reviews i made some alterations. I only used 2 cups of sugar instead of 3 because everyone was saying how sweet it was. Also, i added an extra half cup of eggnog, as everyone was saying it was too crumbly and dry. I cut it before it was fully finished hardening up to prevent any breakage as well. My boyfriend loved it and ate quite a few pieces. It is still super sweet even with only 2 cups of sugar. I might try 1 1/2 cups next time. Tip: Make sure you put it in a 9x9 pan because it was way too thin in a 9x13.

Oatmeal Chocolate Chip Muffins

Reviewed: Dec. 8, 2007
These were okay. They were quite dry, not nearly as moist as i expected them to be with all the wet ingredients. I Thought maybe that was my fault with the first batch. They came out a little too brown. But when i put in the second batch i cooked them for less time and they were STILL too dry. i did replace half the oil with yogurt, but that usually doesnt have that effect on muffins. I dont know. I would make them again but maybe try applesauce instead of yogurt.

Sandy's Chocolate Cake

Reviewed: Nov. 22, 2007
Good but very sweet! i'm not a huge fan of cake so i judge my ratings for cake on the other guests. My boyfriend usually loves cake and he said it was very good but too sweet. My dad said the same thing. That said it is a very good recipe to start with. My suggestion would be to decrease the sugar to 2 cups. 3 is way too many. Maybe a cup less powdered sugar too, but i'm not sure how that would work texture wise. I'll make it again but i'm going to try to make it less sweet.

Monster 'Cake'

Reviewed: Nov. 5, 2007
i was not impresed with the recipe. The icing was too thin to spread on all the cupcakes without falling through the holes in between where the cupcakes did not touch. i ended up adding a lot more icing sugar to the frosting to thicken it up. The end result looked okay, but it was more of a hassle than anything.

Jay's Signature Pizza Crust

Reviewed: Oct. 17, 2007
i made this in my bread machine. i read the review that said that the dough was a little too sticky when she made it in the bread machine so i decreased the amount of liquid by 1/8 of a cup. The consistency was good this way. This crust was good but went quite hard around the edges. That may be due to my longer baking time. I put the pizza crust in the oven for 5 minutes before i put the toppings on so that may be why. i would make this again but make the crust thicker and only make one pizza instead of trying to stretch it to make 2.

Easy Pineapple Cake

Reviewed: Oct. 12, 2007
I thought this was FANTASTIC! i dont like normal cake but i loved this! i made this with only 1 cup of sugar and the sweetness was perfect with the frosting. Just make sure the cake is COMPLETELY cooled before putting the frosting on. It will melt into liquid form :) still tastes good just doens't look as pretty. Very good taste! will definatly make again!
