Triple Layer Cookie Bars

Reviewed: Apr. 18, 2008
These were okay. I added butterscotch chips on top before pouring the chocolate peanut butter mixture. People said they liked them but i wasn't blown away. I probably won't make them again.

Healthier Graham Cracker Crust

Reviewed: Apr. 15, 2008
I give this 4 stars because it was slightly chewy. That said, this is a VERY good alternative to the high fat crusts. I did not add the cocoa powder but otherwise made it the same. Besides the texture, the crust was very good. An awesome subsitute if your trying to eat healthier. I made this with No Bake Cheesecake I from this site. YUM! P.S: i found this was FAR less chewy and held together way more if you make it at least a day in advance. It gets better over time

No Bake Cheesecake I

Reviewed: Apr. 15, 2008
I made this using 2 pkg's of fat-free cream cheese and light cool whip instead of the whipped cream. I used the Healthier Graham Cracker Crust from this site. WOW so good! Will definatly make again! P.S : this gets better as it sits in the fridge so maybe plan to make it a day or 2 in advance.

Baklava

Reviewed: Apr. 11, 2008
This recipe was time consuming but not difficult. My one other complaint was that the baking time was slightly off. The top layer of phyllo dough was cooked too much and ended up very crunchy. I would suggest taking at least 5 minutes off the baking time. Tasted really good though and looked amazing! i was very impressed with myself when i saw the finished product. I will make again but with the time alteration.

Downeast Maine Pumpkin Bread

Reviewed: Mar. 24, 2008
This bread was very good but it could use more spices. I used fresh pumpkin, 1 1/2 cups of sugar which gave it the perfect sweetness, half oil and half applesauce, and 5 egg whites instead of 4 eggs. I would definatly make this again but double the spices. I got 12 muffins and 1 loaf out of the recipe.

Lemon Icing

Reviewed: Mar. 20, 2008
i used 2 1/2 cups of the sugar and 3 tablespoons of lemon juice to add more lemon flavour and make it thinner as people were complaining it was too hard to spread. Ended up tasting excellent, very lemony but a little too runny. A little more confectioners sugar would have done the trick so maybe use 3 cups like the recipe says but add 3 tablespoons of lemon juice.

Lemon Cake

Reviewed: Mar. 20, 2008
I did not make the frosting that goes with this cake, but the cake part was very good! You would never know it's low fat :) I might try next time with a lemon cake mix for more lemon flavour. I topped with Lemon Icing from this site.

Very good lemon bars! I made these because my boyfriend loves lemon and he thought they were so good. I used 1 1/3 cup of sugar and 3/4 cup of lemon juice. Will make again for sure. So fast and easy :)

Chocolate Peanut Butter Cups

Reviewed: Mar. 16, 2008
These were really good but i made the mistake of not trimming the paper liners first, so i ended up with really big peanut butter cups. I also ended up not having enough ingredients and had to make more (my error :) ) anyways, they tasted really good but i think i would add more confectioners sugar to the peanut butter next time to make them more simular to reeses peanut butter cups. The peanut butter in the center was still a little too sticky for me. Overall, yummy recipe though:)

Grammy Burnham's Molasses Cookies

Reviewed: Mar. 13, 2008
I was quite impressed with these cookies especially after the alterations i made. I tried to make them healthier and had excellent results to my suprise. I used half light margarine and half applesauce instead of the shortening. I used 2 extra large eggs and 1 egg white, 1 3/4 cup of white flour and 1 cup of whole wheat. The dough was sticky so i didnt roll it into balls i just dropped from the spoon. They came out chewy and soft and puffed up nicely in the oven! They do get fairly large in the oven so make your blobs of dough smaller than you think you should. i will make again! good low fat cookie for a craving :)

The Best Rolled Sugar Cookies

Reviewed: Feb. 18, 2008
I had to add 1/4 cup water because the dough would not even come together. Once i did that, it was easy to work with. I liked the texture of the cookies but they were a bit too salty tasting for my liking. I would cut down to 1/2 teaspoon of salt next time. I topped them with Sugar Cookie Frosting and it worked well. :) Update: The second time i made these they turned out very good. I cut down the salt and they were much better and i must have done something wrong the first time because this dough was not dry. MMMM i will use this again.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Feb. 5, 2008
I was wanting to try this recipe for so long due to the fantastic reviews and i finally went for it. I don't usually like oatmeal raisin cookies but these were excellent. I liked the added spice that regular oatmeal raisin cookie don't have. I love how they stay chewy after they cool ( i hate crispy cookies). I made my cookies slightly bigger than the recipe called for and they took 14 minutes to bake. I will be making these again but next time i try to add some chocolate chips too. YUM! Thanks for the recipe :)

Welfare Cake

Reviewed: Jan. 30, 2008
I used 1 teaspoon of salt, only 1 cup of sugar and full fat sour cream in place for the oil (still reduced the fat by a lot). i used marshmellow cream as a frosting on top. My sister LOVED it. i liked the fact that it did not have a low fat rubbery texture that many recipes get when you replace the oil with something lower in fat. The texture was that of regular cake. I would make this again but try a different frosting.

Butterscotch Brownies III

Reviewed: Jan. 29, 2008
These were very good but VERY sweet! That might be somewhat due to the fact that i added chocolate chips instead of the walnuts but i think it would have been too sweet for my taste either way. I would make these again but cut the sugar down.

Cafe Mocha Mini Muffins

Reviewed: Jan. 27, 2008
These were very good but slightly dry. Also, made with all the sugar, they are too sweet for me. I would cut out all brown sugar next time. I would make these again but try to add maybe a little more liquid to see if that would moisten them up.
