This is such good bread! i cut the recipe in half. I used only 1 cup of sugar instead of 1 1/2, 1 egg and 1 egg white, fat free sour cream, coconut instead of vanilla extract, and whole wheat flour. It ended up being healthy , filling and amazing tasting. My sister said she liked it better with the coconut than regular banana bread. I will definatly make this again and maybe add some crushed pineapple so its like a hawaiain bread. mmmmm!
Update: When i made this a the second time, i made the whole batch. For that i used 1/2 cup of applesauce and 1/4 cup of olive oil in place of the butter, 1 cup of sugar, fat free sour cream, and whole wheat flour. I also used 1 egg and 3 egg whites. 3 cups of sugar would be WAYYYY too sweet. I think the key to adding the sweetness without the sugar is extremely ripe bananas.
