Huge hit at a company "breakfast club". Easy to make without any advance prep the night before (though I had the ham and egg mixtures ready to go to save time for an early morning.) Don't skip the egg white to finish it off as it really makes it pretty!

Colleen's Slow Cooker Jambalaya

This was absolutely delicious and one of the easiest things I've ever made. I would probably add more heat the next time around, but the andouille I used wasn't particularly spicy. I also had a little bit of a challenge slicing the uncooked andouille so I actually cooked it like bulk sausage rather than sliced. I served this with white rice and people couldn't get enough. It's also great reheated (though the shrimp will get tough if you reheat it.)

Crawfish Chowder

I've never made chowder, but this one is unbelievable. It was only 8:30 am but I just had to have a bowl. Not for anyone watching their fat intake, though. I would definitely use low-fat versions of the cream cheese, half and half and soups (but never fake butter!)

Cranberry-Jalapeno Relish

This one gets huge compliments from all. I serve it as an appetizer over brie or cream cheese with tortilla chips or french bread.

Potato Salad With Bacon, Olives, and Radishes

This is a delicious potato salad. I used Yukon Gold potatoes to keep it crisper. Only had half the bacon in it and it still got raves. I'm making it right now for Father's Day BBQ!

Chocolate Bourbon Pecan Pie

The surface of the finished pie was not very appealing. Next time, I'd probably consider melting milk and white chocolate and drizzling it over the top!
