Amber's Peanut Butter

I make this all the time. I use a 16 oz. jar of dry roasted unsalted peanuts, 1 Tbsp. canola oil and 1/2 c. Splenda. You can use any type of nut you like. The more oily the nut, the less oil you will need to add and vice versa. I've used cashews, almonds, walnuts and pecans. Sometimes I use a combination of all of them. That's when it tastes really good!! Update - lately I've been adding 1/2 to 1 tsp. of hazelnut flavoring to my peanut butter. It's very good!

Easy Chicken Casserole

Between the 4 of us, this got 8 thumbs up!! This sauce is so, so, so good. I used chicken tenderloins, 98% fat free cream of chicken soup and fat free sour cream. I sauted the onions before adding just to soften them up. We do not use buttery crackers due to the hydrogenated oils, so I used crushed multi-grain crackers and sprayed them with fat free butter spray. We ALL wanted the extra sauce. There was NOTHING left. Thanks for this very simple recipe. I know I'll be making this a lot.

Swiss Cheese 'n' Onion Quiche

No meat needed. I doubled the onion and used egg substitute, skim milk and reduced fat swiss cheese slices. I layered the cheese on the bottom before adding the onion. It was fabulous. Great as a main dish or as a side.

Apple Butter Bars

These are good. I like my bars moist, dense and chewy. To accomplish that in these bars, I substituted 2 Tbsp. of Egg Beaters for the egg and used only 1/4 tsp. of baking soda. That way the batter doesn't rise very much and the bars become more chewy. I doubled the powdered sugar and used 1/2 tsp. clear vanilla and 2 1/2 Tbsp. milk for the glaze. My daughter also liked them. These would be great for people that don't like or can't have chocolate.

No Roll Pie Crust II

Oh-My-Gosh!! This is, without a doubt, the best pie crust!! I couldn't make a pie crust to save my life, until now. It is so flaky and tender. This will be the only pie crust recipe I will ever turn to. If I could give it 10 stars, I would. Update: I use this recipe all the time for pies and quiche, and even some cream soups. It is great with Cream of Carrot soup, Chicken Pot Pie soup or any type of tomato soup. Each time I serve it to guests, they want the recipe. Even my mother wanted it. This is the best for people that avoid butter, margarine and shortening. If you use canola oil, that is much healthier for you. I always make this for a serving of 10, it gives a nice thick crust.

Grandma's Heavenly Onions

I made this for 15 people for Christmas Dinner. It was a big hit. I cooked the onions in olive oil, added a bit of fat free butter spray, used a combination of skim milk and fat free half and half, fat free cream of mushroom soup and fat free swiss cheese slices. Everyone loved it.

Italian Dressing Mix

This is the best dressing mix. I was in a pinch and could not run to the store for a bottle of italian dressing. Luckily I had all ingredients on hand. We do not use salt at all, so the salt was eliminated and also used garlic and onion powder, not salt. It was so fresh and delicious. Nothing like bottled dressing. I used it for a pasta salad, added chopped sun-dried tomatoes, salad supreme and a huge clove of elephant garlic. Took it to a gathering and it was devoured. Thank you for this wonder recipe.

No Yolk Deviled Eggs

Spinach Wild Rice Quiche

Sunflower Cookies

Well, I have to say that these are pretty good for a healthy cookie. I really like sunflower seeds, and I enjoyed the crunch of the seeds. However, this cookie is bland. I used canola oil and egg substitute and they turned out fine, but did not brown. I think if you add about 1/4 c. of brown sugar, they would be better. I will try them again. Update: I did make them again with 1/4 c. of brown sugar. That made all the difference in the world. Now my whole family likes them.

Spinach Tuna Casserole

This makes a lot of food. I think the serving size is incorrect. I doubled this recipe last weekend and baked it in a larger casserole dish and it fed our family of 5 and had plenty of left overs for 2 more nights. The flavor is a little bland. Next time I will add some different spices. My family really liked it though.

Chicken Marsala

Absolutely wonderful!! I had to modify this for health reasons, but it still turned out great. I used chicken tenderloins. For the sauce, I used olive oil and fat free butter spray. I didn't have any Marsala wine or cooking sherry on hand, so I just used some sweet table wine. The combination of the mushrooms, wine, olive oil and butter spray was such a delicious combination. When my husband tasted it, his eyes opened wide and said how good it was. I made enough for left overs for tomorrow night, but my husband said I could make for he next three nights. He really liked it. It took very little time to make, so I'll be making this often.

Fruit Punch

I threw a bridal shower for my daughter today. Everyone loved this punch. We had 52 guests and the punch bowl was filled a few times. I had the recipe displayed by the punch, and I was told by many of the guests how good it was. This recipe I'll use from now on for all my parties. It's a keeper.

Lemon Chewy Crisps

If you're looking for a really lemony cookie, this isn't it. I don't care for lemon zest, so I added about 1.5 - 2 tsp. lemon extract, and 2 drops of yellow food coloring. The texture was exactly as stated, "a chewy cookie with a nice crisp brown edge". But a good lemony taste just wasn't there. I doubled the batch as others suggested, but my cookie-eating family ignored these. Sorry.

Chewy Peanut Butter Brownies

Of all peanut butter brownie recipes on this site, this is THE ultimate recipe. I've tried them all. If you want them even chewier, substitute 2 Tbsp. of Egg Beaters for the eggs and add only 1/4 tsp. of baking soda. That way the batter does not rise very much and they become chewy. Bake them for about 25 minutes. Thank you, Jo!!

Broccoli Stuffing

I also made this to be very healthy. I used fat free shredded cheddar cheese, fat free mayo, egg substitute, 98% fat free cream of mushroom soup and the fat free butter spray. As I was mixing it, I was afraid it was going to be too dry, so I added about 1 and 1/2 c. of chicken boullion. My guests loved it.

One-Pan Taco Dinner

This is really good. I used brown rice instead of white. One large onion and 3 cloves of garlic were also added. I didn't have any fresh tomatoes, so I added a can of diced tomatoes. We were out of lettuce, so I threw in a hand full of frozen peas, for color. Water chestnuts might also be good in this dish. It's just something different than the same old meat and noodles casserole. My husband liked it wrapped in a tortilla.

Best Ever Banana Bread

This banana bread is so good. I had to ditch my old recipe because it called for butter/margarine, and I have become lactose intolerant. So, I tried this one because of the oil. I used canola oil and lactose free milk instead of the buttermilk. I also added a streusel topping as one of the other reviewers stated, and it was so delicious. I'll be using this recipe from now on. Thanks so much for sharing.

Cinnamon Ice Cream

Please do not let this recipe pass you by. It's SO scrumptious. Creamy and delicious. I have a Cuisinart soft serve ice cream maker. I made this recipe to be fat free and cholesterol free. I used 2 1/2 c. fat free half and half, 3/4 c. sugar (as others suggested), and 1/2 c. Egg Beaters. I did not cook it as the instructions said because for my I.C. maker, the ingredients are to be very cold. I was a bit concerned that the 2 tsp. of cinnamon was going to be a bit much, but it wasn't. It was perfect. I served it with pumpkin pie. Everyone wanted seconds and thirds. I can't wait to make it again. If I could give this 10 stars, I would. Thank you for a fantastic recipe. This is one I'll be making over and over again.
