Waikiki Cornbread

Absolutely wonderful. My family loves this corn bread. It tastes like there's a bit of pineapple juice in it, but there isn't. Very light and crumbly. I used only 3/4 c. sugar, 3/4 c. Egg Beaters and 1 c. of canola oil in place of the melted butter. This recipe is a keeper.

Hawaiian Sweet Bread

Delicious is an understatement for this bread. I was afraid it was going to be a bit too sweet, but it isn't. My husband stated it was the best I've ever made and even my youngest (who doesn't like corn bread) really liked it. Warning, it is hard to stop eating after just one piece.

Cabbage Soup II

This is very, very good. It does make a lot; enough for several people or more. The aroma is wonderful. I substituted a couple of shredded chicken tenderloins in place of the ham. This is a keeper.

Swiss Cheese 'n' Onion Quiche

No meat needed. I doubled the onion and used egg substitute, skim milk and reduced fat swiss cheese slices. I layered the cheese on the bottom before adding the onion. It was fabulous. Great as a main dish or as a side.

Wow! If you like sickening sweet, then this is for you. I recommend cutting the brown sugar in half or to 1/2 cup. Otherwise they are good.

Spinach Wild Rice Quiche

Chewy Peanut Butter Brownies

Of all peanut butter brownie recipes on this site, this is THE ultimate recipe. I've tried them all. If you want them even chewier, substitute 2 Tbsp. of Egg Beaters for the eggs and add only 1/4 tsp. of baking soda. That way the batter does not rise very much and they become chewy. Bake them for about 25 minutes. Thank you, Jo!!

Vidalia Onion Tart

Nothing short of awesome!! I used fat free evaporated milk, Egg Beaters, fat free mozarella cheese and substituted 3 crushed chicken boullion cubes for the leek soup mix. My husband absolutely loved it!!

Chicken Pot Pie VI

This is excellent. I used an oil pastry crust and vidallia onions. My husband and two boys ate it for dinner, and leftovers the next day. It didn't last 24 hours. My 18 year old thought it was phenomenal.

Hot Cocoa Mix in a Jar

I had high hopes for this one. The chocolate taste was good, but it was not as sweet as I expected, so I added some Splenda. Also, there are lot of yucky clumps at the bottom of the cup that do not stir in, even though I mixed all the ingredients together in the food processor. I will be looking for another recipe. Sorry.

Easy Fruit Dip

My family loved this. I thought it was too sweet, so next time I will not use as much marshmallow. Mine did not come out very pink, so next time I will also use a bit of pink food coloring paste. Thank you for the recipe.

Nutty Stuffed Mushrooms

These are dynamite!! I substituted some fat free mozzarella cheese in place of the parmesean and used fat free butter spray for the butter. I made a double batch for 8 people and these were gone in minutes!!

Fudgy Peanut Butter Brownies

I've nick named this recipe 'F5 Brownies' for Fudgy, Fudgy, Fudgy, Fudgy, Fudgy Brownies. I used fat free cream cheese and home made peanut butter. I also ended up doubling the powdered sugar for the icing, as it was too runny. My family loves these.

Chicken Pot Pie Soup

My family loved this. I used two cans of 98% fat free cream of chicken soup, added sauted onions and used a can of drained mixed vegetables. Poured it into bowls lined with,'No Roll Pie Crust II'. Very filling and very good. Update: I recently made this using Turkey. The recipe calls for potato soup which I did not have this time, so I used a can of diced potatoes which I purified through my food processor and added an extra can of evaporated milk. I also added about 3/4 tsp. of poultry seasoning and some cooked onions. I made the "No roll pie crust" and crushed some on each serving. It was delicious!!

Sunflower Cookies

Well, I have to say that these are pretty good for a healthy cookie. I really like sunflower seeds, and I enjoyed the crunch of the seeds. However, this cookie is bland. I used canola oil and egg substitute and they turned out fine, but did not brown. I think if you add about 1/4 c. of brown sugar, they would be better. I will try them again. Update: I did make them again with 1/4 c. of brown sugar. That made all the difference in the world. Now my whole family likes them.
