Awesome Carrot Cake with Cream Cheese Frosting

Great recipe. I only used 3/4 cups of vegetable oil and it still came out very moist. If I would have used the full 1 1/2 cups I think the cake would have come out very oily. For the frosting I just used 8 oz cream cheese, half a stick of unsalted butter and 2 cups of powdered sugar. It was the perfect amount to frost the 9 x 13 cake.

Easy Vegetarian Corn Chowder

Great chowder. I read the reviews before making this and omitted the nutmeg as recommended by others. Did not use creamed corn, used 2 cans of whole kernal corn drained instead. I also added some minced garlic (little less than a tsp) when cooking the onions in the butter. Also, I'm not too fond of celery so I left that out completely. I added potatoes, red pepper and a small can of hot chili peppers for some spicy. Finally, I didn't have skim milk so I used 2% and it turned out just perfect.

Creamy Banana Bread

I'm not a big fan of banana bread, but gave this a shot. It turned out great. I used a larger bread pan and had to cook it a bit longer than 45 minutes. It was a hit at the office.

Butter Chickpea Curry

Great recipe. In addition to the potatoes and chickpeas I added a frozen veggie medley (carrots, peas, corn and green beans). Other than that I did not change a thing. I served the curry over brown rice with garlic nan. The dinner was great, but I think the leftovers were even better. Thanks for the great recipe!

Chicken Paprikash II

I'm vegetarian, so I substituted Quorn cutlets instead of the chicken and threw in some mushrooms. Also, used butter as suggested instead of the bacon fat. The recipe came out perfect. I had a veggie paprikash soup and loved the sauce, so I had to try it with the veggie substitutes. The cutlets don't need the full hour to cook and the mushrooms were thrown in at the end.
