Spaghetti Squash I

Santa Fe Chicken

Awesome! I doubled this recipe for my family. I did not have 2 cans of beans so I used one can of corn and 1 can of beans. I also seasoned the chicken with fajita seasoning and served with warm flour tortillas. A keeper and my family loved it!

Easy Gravy

A little bland for me so I added a can of tomato soup and sour cream. I poured over over pork chops that I was baking in the oven...yummy!!!!!!

Mexican Pork Chops

Yummy! Okay now, I made a lot of changes because I didn't have the required items on hand. But, it worked and was dynamite! Here's what I did: I only had a box of Goya Black Beans and Rice so I added to that, 1 drained can of kidney beans, one can of creamed corn (yes, creamed! All I had), and one can of Rotel tomatoes with chiles. I added two cups of water (as suggested on box of rice, and brought to a boil on the stove. I then added 6 pork chops that I seasoned with cumin and garlic salt. Covered and baked for one hour. Easy peasy and delish!!!!! Oh, I also added mexican cheese blend and sour cream on the top of the rice when I served it...

Pork Chops in Red Sauce

This was really quick and yummy! I did season the meat with extra seasoning salt and garlic powder since others complained of it being "bland". I baked it in the same pan that I browned the chops in and that was great!!! I would add extra onions next time since it's a family favorite! Oh, by the way, my 7 year old ALWAYS go for the ketchup when we have our "regular" pork chops....no ketchup with this recipe!!!!

Creamed Spinach II

WOW!!!! This was sooooo good. Taking other advice, I also sauted onion and garlic in butter before adding the soup. Also, I put in parmesan cheese as the last step. I used one box of frozen and one bag of fresh spinach as well. This was quick, easy and yumm-O!!!!

Savory Chicken Breasts

Yummy Artichoke Dip

I wasn't sure about the chile peppers but WOW!!! GREAT appetizer. Everyone loved the dip and wanted to recipe. So, if you aren't sure of the chile peppers....it makes the dip!!!

Stuffed Mushrooms with Spinach

This was AWESOME!!!!! I did however, make a few changes to the directions, not the ingredients. Instead of large mushrooms I used regular mushrooms so that they were more of a "finger food". I also made the filling the night before so that it would cut down on the prep time for the next day. These were so yummy that my friend who doesn't usually eat mushrooms, wanted the recipe!!! A must for any gathering....
