Make-Ahead Vegetarian Moroccan Stew

this is one of my favorite meals now! delicious and filling. I have made it in the crock pot, but it does taste different without cooking the spices first. also, I'd add the apricots toward the very end of cooking because the get seems to zap a lot of their flavor. I make this for my husband and I, and we enjoy the leftovers for lunch all week!

Double-Butternut Squash Soup

not the strongest flavor, I kept adding cheese to garnish which added nicely (Beecher's flagship). I thought the almonds were a nice touch, would probably add more next time! I didn't have carrots but used a few small potatoes instead. if you make soups like this a lot I'd definitely recommend an immersion blender, makes life WAY easier.

Vegetarian Tortilla Soup

DELISH!! I did use fresh vs frozen like others recommended. Also did about 2 tbsp cumin, and 1 tbsp of cayenne and chili powder each. I did the black beans as well, and about a cup of quinoa for some extra protein. It was SO good, esp with the fresh avocado on top.

Yellow Squash Casserole

Very filling, but bland. I would definitely add some spices next time. I did add russet potatoes to the squash while cooking, and some black beans when I stirred it all up together for some extra oomph. It needs spices of some kind.

Ginger Veggie Stir-Fry

My coworkers keep giving me grief for how good my leftovers smell at lunch! This is an easy and yummy recipe. Of course, I did change a few things too - I used coconut oil (which contributes to the delicious smell!) and a few different veggies I had on hand. I did start with the corn starch/coconut oil/ginger/garlic, then added brocoli, carrots, and a red pepper. I also added some red cabbage right at the end, so it didn't get too cooked. And a little tofu for extra umph. Delish!
