Chocolate Zucchini Muffins

Wow, I made these and they were just AMAZINGLY good. I made some adjustments - I used whole wheat flour instead and reduced the amount by about 1/4 cup than what the recipe called for. Instead of sugar, I used honey, about 1 3/4 cup. I also lessened the oil by half, which probably made up for the liquid honey that was used instead of sugar. Then, I doubled all the spice amounts and added one more teaspoon of cocoa. I wanted it rich and spicy. So good! Highly recommend.

Tuna Noodle Casserole from Scratch

I liked the basic base of this recipe, but like others have said, it does need some extras! Add chicken stock and also some spices - I added thyme, basil, and marjoram. As well, I just didn't understand the egg noodles - after about only 5 min of cooking, I drained the noodles and found that they were super mushy and stuck together like glue. The texture was yucky. Next time, I will make this dish without the noodles, and maybe serve with rice on the side instead.

I replaced the sugar wih honey (and honey is better for you than processed sugar). Didn't have milk on hand, so I substituted with water instead. It was still delicious!

Pasta Con Sarde (Pasta with Sardines)

This dish was delicious! I sometimes purchase Portuguese sardines and put it on bread and eat it just like that, but only because I don't know what else to do with the sardines. So, I was excited when I saw this recipe. I didn't have fresh parsley on hand, so used the dried stuff. I also didn't have seasoned crumbs on hand, so used seasoned croutons instead. I thought the croutons would break down into crumbs during the cooking process, but they didn't. Next time, I will put the croutons in a blender before using. Even with my changes, it tasted great!! Will definitely make again.
