Citrus-Ginger Roasted Beets and Carrots

Really yummy - I only kept it covered for the first 15 mins and uncovered for the 45 mins to get some carmelization. Yum. Used orange juice instead of grapefruit (didn't have it on hand). Really really good. Could top with crumbled feta or goat chz - even better!

Chipotle Honey Roasted Peanuts

Just for kicks, I'm going to try 2 other versions - using dry mustard and cayenne or hot Chinese dry mustard instead of chipotle. And since I don't usually have chipotle powder on hand, I'm going to try using cumin and cayenne. Oh yum!

Oatmeal Peanut Butter Cookies

Tonkatsu - Asian-style Pork Chop

My family's been making pork katsu as long as I can remember, so here's a tip since the recipe doesn't mention it: pound the meat! It makes all the difference in texture and tenderness. Serving tonkatsu sauce is a must as well.
