Just made these, but I scaled them down to 24 (72 is way too much). I am not one to rate a recipe after altering it, but I wanted to make it healthier and less calories, so I made them (for 24 cookies) using 3 tablespoons of butter, about 1 tablespoon of olive oil, and 1/3 cup of applesauce instead of all that butter called for in the original recipe. I also used 1 cup all purpose flour, a 1/2 cup whole wheat and 1/2 cup white sugar instead of brown (again for 24 cookies not 72). I also added about 1/2 teaspoon salt. Those were my only changes and wow, are they delicious! I also made sure I sprayed my cookie sheet really well since I cut back on the fat so they wouldn't stick. you can not even taste the applesauce, or the whole wheat flour in these. I also cut back a lot on the chocolate chips. Anyhow, I am satisfied that I found a cookie recipe that I can alter and make lower fat and healthier but still incredibly delicious! LOVE THEM!
