About this Cook
I have four children and just moved into a 100 year old home. The oven does not work (which is like a knife in my heart since I love to bake), and only two of the eyes work on the stove. Thank goodness for the Crock Pot.
My favorite things to cook
Beef Stroganoff, Itaian breaded and lightly fried chicken, Texas Millionaire sheet cake, grilled corn and asparagus, filets mignon on the grill, buttermilk biscuits (my grandmother's recipe), red velvet cake, sour cream blueberry muffins, blackberry cobler (I pick them myself), and rice crispy treats :)
My favorite family cooking traditions
Making jelly with my grandmother before she died. Watching my dad make the standing rib roast at Christmas (just like his dad- my PawPaw- did). Making cookies, fudge and peanut brittle at Christmas with my kids and friends.
My cooking triumphs
I have several "signature" dishes that people frequently request- fruit tarts, mini tarts de citron (leftover from my days working in a French bakery), caramel corn, and my STEAKS. It is always a boost for the ego when someone is still raving about something you made for them 6 months later, and hinting about getting some more...
My cooking tragedies
Anytime I get busy at the last mintue and burn the rolls- that is a tragedy. Having to throw out anything because it is inedible -the only recent time it happened was with a pork roast made with French dressing and cranberry sauce- terrible, not a single one of the kids would eat it.

Best Spanish Rice
So easy, with results as good as recipes that have 6+ ingredients. The real deciding factor in this recipe is which salsa you use. I use only high-quality, organic salsa with plenty of cilantro and the flavor is wonderful. If you use cheap, crappy, generic picante sauce, you will get a bland and too-dry version. Picante sauce has a much lower moisture content than salsa. The only thing I add to this recipe is to throw in a little roasted corn when I have it. And remember, SAUTE THE RICE FIRST, PEOPLE. It makes a huge difference.

Bev's Chocolate Pie
I cooked this pie FOREVER, but it was still very "wobbly" when I removed it from the oven, yet a thick, almost burned crust had developed on top of the chocolate filling and the crust's edges were very done. It did not run, but the top was a bit overdone....I wonder if my oven is not heating evenly? Will try this again in a different oven...
