Olive Oil Cranberry Bundt Cake

This turned out great...but, I added 2.5 cups of chopped cranberries and only 1.5 cups sugar Will try next time to reduce the olive oil in half and sub in some mashed avocado to replace it. Spice amount as per recipe gave it a great taste and holiday scent.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

This is the cake I made for my son's birthday and it was a huge hit. I wanted a 13x9 cake and I wanted it at least 4inches tall, so I doubled the recipe for the cake part. I made just one recipe worth of the lemon filling and that covered two of my layers. For the middle layer, I used a pomegranate/berry conserve I had in the fridge. It was a great add as it was very complimentary to the lemon filling and it added a nice hint of colour in the middle. I also needed about 1.5 recipe worth of icing to cover the cake.

Banana Tortilla Snacks

Made this for my kids this evening and it has a huge hit. I made it with almond butter, a few chocolate chips, banana, a tiny bit of honey and a few raisins. I used a soft whole wheat tortilla and put it in the toaster oven to melt the chocolate and heat up the almond butter. This is great when your kids are asking for a treat. I think I may try to make an adult version of this with a hint of spiced rum mixed in with sliced bananas.

Health Nut Blueberry Muffins

I used spelt flour instead of the whole wheat for added nutrition. I also replaced white sugar with brown sugar. Very yummy.....also great with strawberries.

These unfortunately didn’t turn out for me. The dough never settled enough to be handled despite refrigerating for over 24 hours. It was so sticky that even rolling it between parchment paper didn’t help.

Gingerbread Cookies I

Fantastic! No issues with stickiness, no extra flour added (like in some other reviews). I think there are two secrets to making these cookies great: 1. Use butter or margarine that does not have a high water content 2. The dough needs to rest and chill. If you live in Canada (or another colder climate), stick it outside to chill till the dough is quite firm - till it cuts cleanly with a knife.

Cashew Raisin Rice Pilaf

Very good! This recipe is great for vegetarians especially if you sub in brown rice for the white. That way you get a complete protein all in one dish. Our non-veg friends really enjoyed this as well.

Beer Spice Cake

This cake gave the house a great aroma and the taste was good, however it turned out too crumbly. I topped it with cream cheese icing and that helped with the moistness.

Hasty Chocolate Pudding

Good recipe, but it is really not a good idea to microwave milk/dairy as the microwave alters the structure of nutrients in food. I would suggest using the stove, especially if you are going to give the pudding to your children.

Brooke's Best Bombshell Brownies

This is a great recipe...although I did tinker with it. 3 cups of sugar seemed like a lot to me so I only put in 2.5 cups - 1 cup white sugar and 1.5 cups lightly packed brown sugar. They were still plenty sweet. I find that orange and chocolate go great together, so I added the zest of one orange. This worked out really well and the brownies really stood out at my daughter’s school picnic.

Big Soft Ginger Cookies

Well, I feel rather sheepish given the glowing reviews and the fact that I consider myself to be rather good in the kitchen. My cookies came out hard – just like regular ginger snaps. I followed the recipe exactly and baked the first batch for 10 min and the second for 8. However, I think I do know what the issue was. All the reviews stated that the dough was very sticky and hard to work with – mine was just perfect to work with. I live at a rather high elevation of 1083 metres (3556 feet) and the climate is very dry. Next time I’ll add more water or OJ and look at the consitency more closely.
