Irish Potatoes

I loved that these were ready to eat in two minutes. The downside for me were that they were too sweet. That said, my head is swimming with a ton of variations. I did not have cream so I used half & half which worked fine to hold everything together. I would make these again but not use sweetened coconut (which is what I had on hand). I could also see rolling them in melted chocolate/cocoa (to make coconut bon bons) or nuts.

Rich Chocolate Frosting

This is the best frosting I have ever made. I made an "eight serving" recipe which was plenty to frost the top of one round chocolate cake.

Sweet Dinner Rolls

This is a delicious dough. Sweet but not too sweet...reminded me of the sweet rolls at a popular steakhouse. Instead of making dinner rolls, I used the dough to make monkey bread. Yum!

Chili-Lime Chicken Kabobs

Very tasty marinade. I marinated and grilled chicken tenders rather than making kabobs. My kids said, "make this again mom". Next time I will marinade longer than an hour for stronger flavor.

Black Bean and Couscous Salad

Excellent. I made this for the first time for a outdoor party and recieved many compliments. I made the recipe "as is" but it would be easy to change the amount of flavoring or make other additions (tomatoes, cucumber, cheese crumbles, etc.) I used fresh leftover sweet corn instead of canned corn and the flavor was wonderful. I will be making this again during the summer. It is equally good as a side or main dish.

This was a great marinade but like other reviewers, I had problems with the coating process. I will use this marinade in the future however I don't think I will use it for this recipe.

What makes this recipe stand out is the yogurt mixture. The honey adds just the right amount of sweetness. All the flavors blend nicely.

Italian Beef Sandwiches

This is a delicious and simple recipe with the perfect amount of seasoning/kick. The leftovers held up well and continued to taste great a couple of days later. Like other reviewers, I have had "the real thing" while living in Chicago and this recipe was just as good, if not better.

Snow Tunnel Cake

This just didn't turn out great for me. It's not neccesarily the recipe's fault. I used a "chocolate fudge" flavored pudding and used three smaller boxes instead of one large box and I should have added more milk to compensate for the little extra dry mix. I may try this again sometime to "get it right."

Homesteader Cornbread

This is my new cornbread recipe. I halved the recipe and had plenty for my family of four. Cornbread is moist, not dry or grainy. It was also sweet how I like it.

Sloppy Joes II

This was good. My five year old even decided that she like cooked green peppers. I'm not sure that it's an "amazing" recipe, but it is much better than the canned variety and without a lot of fuss.

Pollo Fajitas

This was just not for me although my husband seemed to enjoy it. I used chicken thighs and looking back, I think that I would have enjoyed it more had I used chicken breast. The flavor was just okay to me. Nothing spectacular.

Chicken and Dumplings III

My kids liked this, but I will stick to my "old fashioned" recipe which really isn't that much more work. I don't really like "condensed soup" meals & I probably would have liked this more had I purchased a variety with less sodium.

Awesome Sausage, Apple and Cranberry Stuffing

I have to agree that this was awesome. I've already been asked to serve it again next year for Thanksgiving. The recipe is easy to modify. Like others, I used chicken instead of turkey broth and I omitted the turkey liver.
