Cha Cha's White Chicken Chili

This recipe won me first place in a chili cook off at work. I tweaked it a little bit. i used a rotisserie chicken and twice as many green chilis and no jalepenos. and to thicken it up a bit i, not only mashed up the beans with an immersion blender, but also added some powdered chicken gravy mix. everyone loved it. it really stood out because it was the only white chicken chili. everyone else had regular chili

Middle Eastern Rice with Black Beans and Chickpeas

i made this almost exactly as written except for extra garlic and only one pound ground meat. as suggested i topped with greek yogurt. i love it and next time will add some onion. it is very spicy and dont understand how people could say it is bland. the recipe makes enough to feed a small army.

Eggplant Stuffed with Lamb and Feta

itis still in the oven, so i havent tasted it yet. my advice is to either half the meat recipe if you are only using two eggplants. if not, then you can easily stuff three eggplants with this mixture. i had so much left over so i put around the sides of the eggplants ending up with something that looks like a 9x10 inch meatloaf. also when picking the eggplants try to get male eggplants. they have lots less seeds. mine were female and after discarding the seeds, i had very little eggplant pulp left. if you dont know how to tell male from female...look at the bottom of the eggplant. males have a round bellybutton, females have a longer almost slit like bellybutton. no joke. since this turned out to be so much meat, i am making some rice to serve with it. a simple salad, too.

Steve's - Balsamic Roasted Brussels Sprouts

found this recipe, which is similar to the basic roasted recipe. the balsamic vinegar does add a little kick. they are crispy on the outside and almost creamy on the inside. that is different, but i liked it.

Lebanese-Style Tabouli

i made it pretty much as is, only change was i used only green onions. i love the lemony flavor. dont mind the cinnamon. but as one person said maybe all spice would be a better choice. i am not tabouli expert but i thought it was tasty. i will make it again

Melinda's Porcupine Meatballs

i dont know what went wrong. i followed the directions except used tomato soup but the rice was still hard. the sauce was very watery. i ended up putting them in the crock pot to cook longer. guess we will go out for a hamburger for dinner tonight.
