Chicken Stir-Fry

I made it just as written and it was sensational! Restaurant quality! Definitely modify the ingredients for your own taste but for us this was just about as perfect as it gets! Wish I could give it more stars! And the fact that it is gluten free and dairy free is a bonus!

Chicken Marsala

This was great! I made as-is but eliminated the mushrooms because I wasn't sure my family would eat them. I also put the flour mixture in a baggie and didn't have enough to coat all of the chicken so I ended up doubling that part of the recipe. I added the chicken to the oil/butter too soon and my chicken ended up not brown enough and a bit soggy. Make sure to wait until the oil/butter is hot enough. I also pounded my chicken too thin and it just crumbled into pieces. But with all of my personal short-comings, it was fantastic and tasted great! I did add a bit of flour after I removed the chicken to thicken the sauce. Next time I will not omit the mushrooms (my family said they missed them!) I will not pound so thin and I will make sure I add the chicken at the right time to the pan. Even with how it turned out tonight I would put it up against any restaurant version. Awesome recipe!!!

Orzo with Parmesan and Basil

This really was good. We were out of fresh basil and used some fresh spinach we wilted in the microwave instead. There was none left! I did use a really great aged Parmesan that I hand grated right before mixing. I'll likely try this with the pre-grated stuff in the future and I think it will be just as good. Wonderful recipe!

Amazing Pork Tenderloin in the Slow Cooker

Wow! This recipe is a keeper. So easy, filled with flavor and low in calories too! I made it with a 1.3 pound tenderloin but kept the rest of the ingredients the same and ended up throwing away a lot of wonderful sauce/gravy. I did end up adding some flour to it to thicken it up. I also only had to cook it for 2 1/2 hours instead of 4 hours because our cut of meat was smaller. I think it had a tad too much garlic and maybe too much wine but again, we used a smaller cut of meat. I ended up slicing it into the sauce and letting it sit in the crock pot on warm. We put in on dollar rolls with some cheese slices and it was fantastic! Great recipe that will be part of our dinner planning from now on!

Baked Asparagus with Balsamic Butter Sauce

This was pretty good. I used VERY expensive balsamic and that made a difference. I felt I had way too much sauce. It tasted good though and lasted through a BBQ on a warmer!

Sweet, Sticky and Spicy Chicken

I made it and my husband made it and both version turned out fabulous! He followed the directions pretty perfectly (tossed the chicken in flour first) and it was just a bit too spicy and a bit too soyish, so the next time we reduced the hot sauce and upped the honey. Now it wasn't hot enough and still not sweet enough for us. BUT... WONDERFUL anyway! I'd make it as directed and tweak until it suits your tastes!
