Grandma's Pork Chops in Mushroom Gravy

Reviewed: Dec. 11, 2004
Great recipe--especially since it is not canned soup based. This sauce is also good with chicken breast and artichokes (use all the sherry). You may substitute a veggie stock for beef. Thanks Heidi!

Juicy Fruit Salad

Reviewed: Dec. 17, 2004
This is gooood! I make it with 3 apples, crushed pineappple (small can), 1 small can frozen OJ, a bit of shredded coconut and I throw in a few cut up maraschino cherries (your young'uns might appreciate a handful of mini-marshmallows, too). I add 1 cup water and let sit in the fridge overnight. Come Christmas morning, it's ready! Never leftovers.

If you want to raise this recipe up a notch, use anchovies instead of meat! It is delicious. Try it, you'll like it.

Scottish Oat Scones

Reviewed: Jul. 2, 2005
Ooh SugarBabies! These are gooood BUT to gild the lily, mix up a glaze of powdered sugar, either milk or water and a bit of maple flavoring. Criss-cross the scones with this bit of icing after the scones have cooled. YUMMY!

Tuscan Chicken

You could substitute dried great northerns if you cannot find canellini in the Progresso aisle or in the health food section. Tuscans love their beans (more than pasta)! It does not need to be served with added carbohydrates--just add more beans. I liked extra garlic, too. Thanks for the recipe.

Pineapple Zucchini Bread

Reviewed: Jul. 28, 2005
Just made this and it is very good. I diced dried pineapple and mixed in with the glaze. Next time, I will poke hotes with skewer in the top of the baked bread and pour glaze over to make it more moist/more tasty! May even use 1/4 cup applesauce and 1/4 cup butter, too.

Chocolate Zucchini Bread I

Reviewed: Jul. 28, 2005
Well, this didn't stay in my kitchen very long! Everyone loves this recipe because it is more chocolate-y than sweet. I will always use the unsweetened bar for that reason. I used the applesauce/oil mix and it gave a wonderfully moist loaf. I did add a little more flour before I poured into mini-loaf pans. Hint: Mix your chocolate chips with 1/4 c. flour before you add to the mix! I cannot wait to make this again and I hope it freezes well--I've got a lot of zucchini.

Summer Nights Eggplants

Reviewed: Aug. 24, 2005
I loved this recipe but made some alterations: I microwaved the cubed eggplant, onions and green pepper because too much olive oil is absorbed to saute this. Instead I finished the veggies off by sauteing them with the olive oil, garlic to brown them a bit. I added the tomatoes and I added a little ground lamb because I had some left over. I added only 1/2 the breadcrumbs to the veggie mixture. I followed the rest of the recipe as written but I lightly shook a bit of ground cinnamon over the feta before I melted it. Very Greek; very good!
