Anika's Cheesy Green Bean Casserole

Reviewed: Dec. 26, 2010
This recipe was great! I couldn't find any bacon cheese spread, so I ended up getting a garlic and herbs cheese spread. I probably used a little more of that than the recipe calls for, but my family likes rich, cheesy food. Everyone said they loved this dish. My husband, said out of everything we had, this was his favorite dish. (and we had plenty of good eats!) I will definitely use this as my green bean casserole recipe from now on.

Grilled Shrimp Scampi

Reviewed: Jun. 27, 2007
This is going to become a weekly dish in my household. This was excellent. Fresh parsley is not needed, I used dried and it was great. I didn't use the crushed red pepper, but that was just personal preference. Definintely a winner.

Monday Night Hot Wing Dip

Reviewed: Dec. 26, 2010
Great recipe and great combination of flavors! This recipe is going to be a keeper for sure. To chop the chicken, I used my food chopper, which helped get the chicken to a nice size and able to be tasted throughout with no big chunks. For the hot pepper sauce, I used "Frank's Red Hot" which seems to have the best flavor, no strong vinegar taste. Some guests were a little nervous about trying it saying they had it before, and it wasn't that good. They tasted this recipe, and immediate raved about it. This does make a large amount of dip. I had 14 people eating it and this was plenty. Delicious!

Grilled Rock Lobster Tails

Reviewed: Jun. 27, 2007
This was a great and simple dish to make. The marinade keeps the lobster tails very moist... no need for butter with this lobster. This is paired wonderfully with the Grilled Shrimp Scampi.

Caesar Salad Supreme

Reviewed: Jun. 27, 2007
This was much more simple to make than I initially thought. It tasted great. I noticed that many people didn't add the anchovies because they don't like them, which neither do I, but anchovies are the staple in the dressing. I don't think it would be nearly as tasty if the anchovies were not in. Croutons were excellent. I didn't make them very crunchy, just lightly toasted, which was great and much easier to chew if you've got a crusty bread.

Eclair Cake

Reviewed: Dec. 26, 2010
This recipe was delicious! I didn't know how it would be but read the reviews, so figured I'd test it on my family as guinea pigs. It was a huge success. There were 6 desserts to choose from, and this was the one everyone ate, and had seconds of. It is a cinch to make! I did use cinnamon graham crackers, but I don't think that made a huge difference. Also, I did follow the tip of microwaving the frosting before putting it on. I just threw mine in the microwave for approximately 30 seconds, and it was thin enough to pour. I will, 100%, definitely be making this again!

3-Cheese Pasta Bake

Reviewed: Jun. 22, 2010
This was good for something simple and quick, like an after work dinner. For me, this was a little too cheesy, and I followed the recipe to the T. I guess it could have been the kind of cheeses I used, but it was a little rich for me. I'd make it again, just not a weekly meal for me.

Easy Alfredo Sauce I

Reviewed: Sep. 28, 2010
By far, the best alfredo sauce I've ever made. It is very simple! My husband asks me endlessly to make this for dinner. It's really simple to add some shrimp or chicken as well. LOVE this recipe!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 9, 2008
I would consider making this meal again, but without the onion. The onion gave it a little bit of a sweet flavor that actually became sickening after a little bit. Other than that, it was great and extremely simple.

Tiramisu Layer Cake

Reviewed: Jun. 27, 2007
This was one of the best cakes I've made in a while. My family loves when I make tiramisu, but this was not nearly as labor-intensive with the exact same flavor. Great recipe, I would not change a thing.

Baked Salmon II

Reviewed: Nov. 8, 2012
This was phenomenal! I followed the recipe all except I used dried parsley rather than fresh. My only recommendation would be to cut back on the salt a little bit. I'd rather put too little and salt it when I'm eating it, then have it be too salty. Otherwise, is was probably my favorite salmon receipe.

Slow Cooker Pulled Pork

Reviewed: Sep. 28, 2010
This is the only way I will make my pork bbq anymore. I've tried different cuts of pork, from tenderloin to shoulder, and it is all good depending on which cut you like the most. I like to mix both tenderloin and shoulder to add the more fatty, juicy meet with the dry meat.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Jun. 27, 2007
These were delicious, but I changed a little bit. I added an extra clove of garlic per layer of potatoes. I used sharp cheddar cheese and romano instead of parmesan. The cheeses made the flavor very rich, if you would prefer a little less rich, use the cheeses it calls for. Also, I would probably cook the potatoes at approximately 400 degrees because after 1 hour of cooking, the potatoes were still not cooked. Otherwise, the recipe was great.
