Summerly Squash

I am sure that this is fabulous as is but, I had no tomatoes! I did, however, have zucchini and squash that I needed to use NOW. I searched for recipes and found this one ..... I sauteed the onion, added chopped garlic, then added the sliced zucchini and summer squash. Kosher salt/pepper. Yum! No disrespect to the originator, but I just had to share and hope most can appreciate these "crisis" moments in the kitchen. I gave five stars based on the proportions and combination of ingredients alone, plus the other stellar reviews. I promise to make "as written" and will give another review then. Squeakychu: my deepest compliments to you and know that you inspired me in a critical moment!

Creamy Au Gratin Potatoes

Excellent! Perfect as is. I chopped the onion simply because I don't like sliced in my potatoes. I also topped with buttered bread crumbs as someone suggested. Outstanding, easy and I will make again and again. Thank you, Cathy M!

Roasted Brussels Sprouts

Excellent - but cook less @ 400 (35 minutes max). Otherwise, reduce heat. Add more olive oil to keep moist, stir frequently (especially when you smell burnt!), and add garlic powder in addition to the S&P first. Enjoy!

Apple Turnovers

Delicious filling however I would use only three apples next time plus cut the sugar accordingly. Mine looked messy since I didn't neatly trim the pastry once I rolled it ourt so I would do that next time too. DEFINITELY use egg wash (1 egg beaten with small amount of water). Brush this on before baking for a flaky crust finish. Otherwise, delicious and a nice treat!

Spiced Slow Cooker Applesauce

Yummy! I used 5 gold delicious and 5 red delicious apples since that's what I had on hand and wanted to use up. I sliced very thin using my mandolin. Added 3/4 cup water and cooked on low for six hours. I added 1/2 cup brown sugar, 1/2 tsp. cinnamon and dash of nutmeg at the end, stirred and heated through for another 30 mins. Wonderful. I honestly don't see how one could mess this up since it tasted perfect without adding anything. Enjoy!

Slow Cooker Buffalo Chicken Sandwiches

Fabulous! Easy! I used a whole bottle of wing sauce (17.5 oz.) and entire package of dry ranch dressing mix, 4 boneless chicken breasts, 3 Tbsp. butter. Just dump it all in the crock and forget about it for 7 hours. I shredded and put back in the crock as someone else suggested, leaving it there for another hour. Perfect for game day!

Chicken Cordon Bleu I

Excellent! After pounding the chicken, I dipped in egg wash and then in seasoned breadcrumbs. I placed a slice of ham (deli/Virginia baked) and slice of Swiss on top, rolled up then sprinkled with a touch of more crumbs. Baked at 400 for 25 minutes per other recommendations. Succulent and juicy! Served with steamed broccoli sprinkled with lemon pepper seasoning, baked potato and crescent rolls. Yum! I also served the sauce that others mentioned: (1) can cream of chicken soup, 1/2 cup sour cream and (1) tbsp lemon juice. Mix, micro for 2 1/2 minutes on high OR heat in a saucepan. Pour over chicken before serving. Delicious and will definitely make over and over again. Enjoy and thanks, Kiersten!

Excellent! Very creamy, garlicky and delicious! I made ahead of time and put in a casserole dish to warm on low ((200) while my meal was cooking. Perfect and a great compliment to a rib eye roast along with lemon pepper green beans (recipe also found on this site). Lovely meal. Don't change a thing for these potatoes. I will most definitely make again and again. Enjoy!

Balsamic Roasted Pork Loin

I used the marinade on a pork tenderloin and it was delicious. Moist, flavorful, easy, excellent. I used 1 1/2 times the amounts because I like a lot of marinade. I marinaded 8 hours since I always feel as if longer is better and I was religious about turning over every two hours. It was great and I will definitely make again! Very easy.
