Best Brownies

Reviewed: Jul. 12, 2000
I have never liked any homemade brownie recipe until I tried this one. They are so moist and rich. They are a great do ahead recipe since they taste delicious the next day.

Pineapple Chicken Tenders

Reviewed: Jul. 12, 2000
These were so delicious! My whole family loved them. I added one minced clove of garlic and about 1/4 tsp. ground ginger. I grilled pineapple chunks on the skewers along with the chicken.

Lemon Chicken II

Reviewed: Nov. 19, 2000
This is the best lemon chicken recipe I've tried. My husband likes to order lemon chicken at restaurants and he thinks this recipe is great! I added a couple of tablespoons of flour to the batter recipe so that it would adhere better to the chicken. I also left the breasts whole. Very delicious! This one's a keeper!

White Chili II

Reviewed: Nov. 19, 2000
I see this recipe has been revised....the original recipe didn't say whether to seed the jalapeno's or not....and my chili was much too hot with two unseeded. I'm glad to see that the recipe is now more succinct because it is a good recipe to try.

Easy Slow Cooker French Dip

Reviewed: Jan. 26, 2001
I didn't have beer so I added a small amount of white wine. I wasn't overly excited about this recipe after slicing the meat BUT I loved it after following some reviewers advice. I sliced the beef and let it cook in the broth another couple of hours until tender. It was wonderful with cheese, sauteed onions and peppers! I will make this again!

Cajun Chicken Pasta

Reviewed: Feb. 10, 2001
My husband and I loved this recipe! I would suggest using part half and half though. I used all heavy cream and it was a little too rich. I also added shrimp and more cajun seasoning. Delicious!

Jim Goode's BBQ Beef Rub

Reviewed: Feb. 10, 2001
I wasn't as excited about this recipe as others were. I tried it on a London Broil. Maybe I needed a different cut of meat.

Best Ever Chocolate Chip Cookies II

Reviewed: Mar. 15, 2001
I had previously overlooked this recipe while trying to find a good chocolate chip cookie recipe because of it's simplicity. I tried it today and was very impressed. The real butter gives it a wonderful flavor. I liked the texture....crispy outside and soft inside. I will make this recipe again!

Cottage Cheese Chicken Enchiladas

Reviewed: Mar. 30, 2001
I wouldn't say these were the best enchiladas I've had, but they were definitely tasty. Mine got a little mushy, but they were good enough to make again!

Jamie's Cranberry Spinach Salad

Reviewed: Apr. 2, 2001
I think this was a little too different for my "meat and potatoes" guy, but I really liked this salad! I did substitute strawberries for the cranberries and pecans for the almonds. Next time I'll try it with cranberries.

Braciola I

Reviewed: Apr. 10, 2001
I was so surprised to accidentally run across this recipe, for I too, had tried to find the recipe after "Everybody Loves Raymond". I committed a culinary sin and left out the raisins. (We just don't care for them!) I thought the recipe was still delicious! I substituted a can of crushed tomatoes with italian herbs in place of the spaghetti sauce. I might try slow cooking them in my crock pot next time to see if it turns out more tender. I will make this again!

Beth's Chocolate Chip Cookies

Reviewed: May 15, 2001
I really didn't care for the cake-like texture; and they looked like little mounds instead of regular cookies. I prefer my chocolate chip cookies to be crisp on the outside and chewy on the inside.

Coconut Shrimp I

Reviewed: May 23, 2001
I'd ordered coconut shrimp at a restaurant and was excited when I found the recipe here. I didn't use beer, I substituted club soda. I found them to be every bit as good as the shrimp at the restaurant. Delicious!!! Thank you for posting the recipe.

Garlic Parmesan Chicken

Reviewed: Jan. 19, 2002
This recipe is tasty!! The chicken has good flavor and is very moist. My whole family liked it. I halved the breading recipe and it covered three large chicken breasts with a little breading left over.

Chicken Lo Mein

Reviewed: Jan. 24, 2002
I'm sorry to write a negative review but I was expecting this to be better than it was. I think it would have helped had I used asian style noodles rather than linguine. I thought this would compare to restaurant lo mein and it didn't. (Although my kids really liked it.) I agree with the reviewer who said there was too much ginger.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jun. 19, 2002
I am one of the few who will keep searching for that perfect chocolate chip cookie recipe. I think my mistake in choosing this recipe was that it makes a cookie with a cake-like texture. I prefer a buttery, crispy texture. That's not a fault of the recipe, just my own preference. So, if you like cake-like chocolate chip cookies, this recipe might be for you.

Apple Enchiladas

Reviewed: Jul. 24, 2002
This recipe was delicious AND easy! What more could you want? A future change I will make is the tortillas....mine were tough even though I cooked them until they were crispy on the outside. I wonder if phyllo dough would work? I'll probably double the sauce next time because the sauce is what makes the dessert so yummy. Thanks for sharing this recipe Brenda!

Chicken Enchilada Soup II

Reviewed: Sep. 9, 2002
This recipe is spicy and filling....perfect for a cold, rainy day. It was very good! I soft fried some table top corn tortillas, cut them into small strips and stirred them in during the end of the cooking time. I also thought it needed a little color so I added two green onions sliced. I served it with a little grated cheese and a dollop of sour cream on top. I will make this recipe again!

Italian Sausage Soup

Reviewed: Sep. 9, 2002
I made this recipe on a cold day and it really hit the spot. I increased the garlic to three cloves, added one small onion diced, decreased the zucchini to one, omitted the spinach, and added about a cup of cooked pasta (I added the pasta at the end of the cooking time). Next time, I think I might use hot italian sausage instead of mild to give it more zing. Thanks for sharing the recipe Karen.

Pumpkin Cheese Pie

Reviewed: Oct. 19, 2002
This recipe leans more towards "pie" instead of "cheesecake". I know the recipe says "pie" but I guess I expected to taste the cream cheese more. It is still a very good pumpkin pie recipe. I baked it in a ten inch springform pan with a graham cracker crust. It was moist and tasty!
