Thai Beef Salad

This recipe is so good! I made a few changes. I used a combination of lemon juice and lime, adding the zest from two limes. I also added bean thread noodles and I served chopped jalapenos on the side for those who like it hot. I didn't use the lemon grass or the tomatoes but I thought it was still delicious without them.

Real N'awlins Muffuletta

Yum! Great addition to our Superbowl buffet. I omitted the pearl onions and instead, added sliced red onion. I couldn't find mortadella so I left that out as well. I didn't want soggy leftovers so I put the meats on the bread and put the salad in between the meat and the cheese. We thought it was even better the next day!

Cranberry Stuffed Turkey Breasts

I made up my own stuffing recipe but used these instructions for butterflying and cooking the turkey. The breasts were cooked to perfection! I don't think I've ever tasted a more moist turkey breast. Thank you Esther!

Sweet and Sour Chicken II

Very good! However, I reduced the vinegar to about 1/3 cup and it was plenty tangy. I think the 1/2 cup the recipe calls for would have been too much for my taste.

Melt In Your Mouth Toffee

I wasn't too impressed with this recipe. Even though I had my burner on medium/low, the mixture started to burn quite quickly. I have a tried and true toffee recipe that's more forgiving. Sorry!

Texas Pork Ribs

Delicious! My only complaint is that the barbeque sauce tasted more like ketchup than I like. I added about a half a cup of KC Masterpiece to fix it. I'll be making this recipe many times!

Texas Sheet Cake I

I halved the recipe and cooked it in a 9 x 9 inch pan. I also added a bit more sour cream. It turned out yummy! If you want authenticity, I'd stick with the original recipe and pan size. Mine rose higher than traditional sheet cake.

Excellent Oatmeal Cookies

I didn't care for these right out of the oven. They were fragile and didn't have a chewy texture at all. They were much better when they cooled....they ended up with the chewiness I was expecting. Thank you!

Carrot Cake III

I've made this recipe about four times now. Every time, it's fallen some in the middle. I might try pairing this frosting with a different carrot cake recipe. Thanks for sharing....it still tastes good, I just can't seem to keep it from falling.

Deep Dish Brownies

I've always preferred boxed brownie mix to homemade because with homemade, I could never get the fudgy/chewiness I like in a brownie. Like others, I reduced the eggs to two and reduced the baking powder to 1/4 teaspoon. This is now my standard brownie recipe. I've made these countless times with great success. I don't even bother with boxed mixes anymore.

Pumpkin Cream Cheese Muffins

Oh wow! These are good! I almost followed the recipe to a tee. I added a little more cinnamon and a pinch of nutmeg. I substituted veggie oil for the olive oil; and I replaced half of the white sugar with brown. Next time, I'll follow the advice of others and double the cream cheese mixture. Thanks for submitting the perfect recipe for Fall!

Mongolian Beef I

I tried to jazz up the flavor a bit by marinating the beef whole, grilling it, then slicing it into strips. I also added extra garlic and red pepper. The overall dish turned out okay, but I doubt I'll make it again. I just prefer a different recipe I've found.

Caramel Shortbread Squares

After reading all the reviews, I made these changes: I greased and floured the pan, poked holes in the raw crust, cooked the crust a bit longer than the recipe says to and then let it cool. I slightly shortened the cooking time on the caramel mixture. I also decided to try sprinkling the chocolate chips directly on the warm caramel layer. I covered the pan to help them melt, then I spread the chocolate with the back of a spoon. I also added some chopped pecans over the chocolate. I loved it with nuts! The end result was a rich and delicious cookie/candy. I had a hard time not eating more than my share.

One word.....YUM! I made it exactly as written and it was delicious! I didn't find it overly sweet like others apparently did. I used the French Pastry Pie Crust recipe with good results.

Shrimp and Crab Enchiladas

These were pretty good. I added a bit of cream cheese, green chilies, and garlic to the filling which added a lot of flavor. The only problem I found with this recipe is that the green enchilada sauce seemed to overpower the delicate crab flavor. I might try this again but I'll add less of the green enchilada sauce and maybe add some half and half.

Cream Cheese, Garlic, and Chive Stuffed Chicken

I'm glad to have another yummy low-carb recipe to add to my collection. The only problem I had with this recipe was that I had to cook it longer than specified, and the bacon didn't crisp enough. I broiled it a bit to crisp it up. Make sure you secure the ends of the breasts well, because I didn't and my cream cheese leaked out. I also added salt and pepper to the chicken. Thanks for submitting this recipe!
