Roasted Winter Squash Seeds

Delicious and Addictive! As others suggested I dry roasted them for about 35 minutes, then added seasoning (paprika and salt).

Apple Dumplings III

Apples, sugar, cinnamon, all wrapped in crust - what's not to like?! I used 1 heaping 1/4 cup of brown sugar and 1 heaping 1/4 cup white sugar and an extra half teaspoon of cinnamon in the syrup. As other reviewers suggested I rolled my apples in sugar and cinnamon before wrapping in dough. I also added the syrup after the first 20 minutes of cooking.

Lamb Madras Curry

This was really good and not as complicated as it may seem at first glance. I went light on the tamarind and made my own garlic and ginger paste. Nice, complex flavors.

Tomatillo Salsa Verde

This is delicious! Pan roasted my tomatillos first, used only one cup water and half the salt. Was wonderful on nachos, black beans, and quesadillas.

Corn Fritters

This was a really good base recipe. I made one batch with with extra sugar and cinnamon and the other with red pepper flakes and a bit more salt. As other suggested, we dipped them in maple syrup.

Liege Belgian Waffles with Pearl Sugar

These were enjoyed by the kids as well as the adults. I only had 3/4 cup butter and they came out delicious with a crispy outside and a chewy, tender crumb. This is a keeper!

Sweet Potato Pie I

Very tasty! I followed others recommendations subbing some of the white sugar for brown and adding a little extra spice. Also, because I was short on butter I only used 1/4 cup. The flavor was delicious and the texture was terrific.

Oatmeal Sourdough Rolls

I made 8 large hamburger size buns and two tiny loaves. Did not use a bread machine, used the Kitchen Aid to do most of the kneading since this dough is on the "sticky" side. Also did a milk wash on top before popping them in the over. They came out beautiful and delicious!

Sam's Famous Carrot Cake

Really good carrot cake - not too sweet and very moist. Don't care for coconut so I added a little extra carrot and some grated ginger. Topped with a Lemon zest cream cheese frosting.

Sourdough Pancakes

These were o.k., I found them a little dry and, perhaps on account of my young sourdough, not very flavorful. I did not have a problem with them being too thin, that said, each sourdough is different leading to different results).

Absolute Best Pancake Syrup

Really tasty. After reading the reviews I reduced the sugar and opted for the brown/white sugar combo (1/4 brown, 1/2 white). Did have a lot of foam but passing it through a strainer helped. This is great on ice cream, waffles, pancakes and drizzled over fruit and yogurt.

Stove-Top Macaroni and Cheese

Made this with a combo of cheeses - mild cheddar, colby and a little parmesan. It was a little bland for my taste but could certainly be dressed up with a bit of cayenne or bacon atop. Alternately a stronger/sharper cheddar should be used. Also will use less flour next time (I think that's the "grainy" texture others complained about).

Beth's Spicy Oatmeal Raisin Cookies

These were really good. I loved the extra spice and that the cookies stayed moist inside and crisp around the edges. Used cranberries instead of raisins. Also, mine took a couple extra minutes in the oven.

Honey Of An Oatmeal Bread

Nice soft bread with a tender crumb and just the right amount of sweetness. Did not use a bread machine and I will admit I was worried when it didn't rise in 60 minutes as I thought it should. Luckily, all it needed was another hour (and some patience on my part).
