Quick Alfredo Sauce

This was a great Alfredo sauce. The fresh garlic is a must for the flavoring. Otherwise, you might be able to taste the flour. My husband said that when it was hot off the stove it was the best. After it sat a bit and cooled, it got too thick. I think I might have cooked it a bit too long. Next time I will stop the cooking just as it starts to thicken.

Chocolate-Zucchini Cupcakes

Really good! Doubled chocolate and used 3/4 c applesauce and 1/4 c oil. Replaced nuts with chocolate chips. Used Creamy Chocolate Frosting by Tracy Larsen found on this site as well. Soooo good!

Whole Wheat Snickerdoodles I

These were disappointing to me. I did not have Cream of Tarter. So, I also eliminated the baking soda and substituted 1 tsp of baking powder. Per a site: "When baking and cream of tartar is used in tandem with baking soda, the obvious substitute is baking powder. Baking powder is made up primarily of baking soda and cream of tartar. Every 1 tsp of baking powder is the equivalent of 1/4 tsp of baking soda and a tsp of cream of tartar." http://www.fitday.com/fitness-articles/nutrition/healthy-eating/substitutes-for-cream-of-tartar.html#b So - maybe my review isn't fair. However, they were nice and fluffy and a little chewy on the inside, so that seemed right. Just the taste....I don't think I like the whole wheat.

Oriental Edamame Salad

Seriously good!! This is really fresh and tasty. My husband doesn't like cooked veggies, so I am constantly trying to figure out different ways to serve fresh veggies. I saw a recipe for Oriental meatballs on another site and knew I needed a side dish. My 5 yr old daughter didn't care for it...but she doesn't like much of anything...except she loved the meatballs:-) (http://family.go.com/food/recipe-819870-chinese-style-turkey-meatballs-t/) I did everything as directed, except I used julienned carrots and omitted the water chestnuts and baby corn.

Frank's Famous Spaghetti Sauce

Great tasting...with modifications...it is a five star, probably just three as is. little sugar, balsamic vinegar, about 1/4 c wine, no meat (used vegan meatballs from Trader Joe's - awesome!), red pepper and bay leaves.

Fragrant Autumn Vegetable Soup

Yummy! I left out the corn, used fresh tomatoes and garbanzo beans but did everything else just like it states. So fragrant and warming. I was looking for a soup that used butternut squash with a bit of protein and found this. Glad I did.

Black Beans 'N' Rice

Way too much water for the beans. I took some out and pureed them, but it was still way too thin. Not a bad taste, but nothing really special for me. I don't think I would make these again.

Winter Energy Cookies

I really liked these with all of the good ingredients. Didn't make me feel so guilty about eating something so yummy! My hubby, on the other hand, didn't really care for them...I think he was expecting them to taste like an ordinary chocolate chip cookie.

Way Easy Pizza Sauce/Bread Stick Dip

Good and easy. I used Garlic, Basil and Oregano tomato sauce and paste. So I didn't use garlic or oregano. However, I did use garlic salt along with the other spices.

Pizza Dough II

Great! I used 1 T of honey instead of sugar and used 2 cups whole wheat and 4 cups all purpose flour. I used the advice of another reviewer and preheated pizza stone for 30 min at 500 and then put the dough on the stone with a little bit of corn meal. I had all my toppings ready and just loaded it up. I cooked it on the lower shelf at 500 for 10 minutes.

Sweetheart Cupcakes

I made green for St. Patrick's Day and instead of using the 3rd tinted cake batter, I made mint chocolate ganache for the center of the cupcakes. FABULOUS!! Ganache: 13 ounces heavy cream, 6 ounces bittersweet chocolate and 6 ounces Andes Mint Chips. In a sauce pan bring your cream to a light boil. Then pour in the chocolate and start stirring immediately. Keep going until you have a smooth mixture. Turn off your burner and set aside to cool. Once room temp, use in place of the 3rd tinted cake mix. I used this and store bought white icing piped together for the icing. The overall presentation wasn't near as well done as it could have been, but they really were great tasting.

Chicken Pot Pie VIII

Great recipe. I used the Pillsbury crust. I cooked my chicken breasts for about 10 minutes in a mixture of vegetable broth and chicken broth and then added the carrots and potatoes and cooked for an additional 5-7 minutes, like another reviewer suggested. I then removed the chicken and veggies from the broth and then added it to the butter/flour mixture (added some water to bring it to 3 cups of fluid). I omitted the celery. I had enough filling for 2 pies. Yummy!
