Blackened Salmon Fillets

This is our go-to recipe for salmon, now that we have a cheat to make it cook up faster: instead of sauteeing each individual fillet in butter in a skillet, I lay them all out on a baking sheet, slather with butter, and pour the spice mixture on. And for my kids, I pour on a LOT less of the spices! I usually am able to get a lot more than 4 fillets out of one batch of spices :D We like this served with brown rice and roasted squash.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I was impressed by how delicious these muffins were! I am usually annoyed by recipes that use applesauce to replace oil, but this recipe has some oil and it actually tastes better with the applesauce (I tried replacing half of the applesauce with oil and it wasn't as good). I usually double the strawberries, but one time I didn't have enough strawberries to double so I added in blueberries and it was just as good :D

Unyeasted Bread

So basically this is a biscuit recipe, made into loaves instead of biscuits. I might like my own personal favorite biscuit recipe better, but I was impressed with how well this turned out!

Tasty Green Beans

I thought the soy sauce would all cook out, but it didn't. These just tasted like soy sauce....not like green beans. I thought soy sauce was supposed to be a condiment, not a side dish!

I made these biscuits with sausage gravy every Friday morning for our seminary class. They loved the biscuits! I tried to use store-bought biscuits once, and they wouldn't have it!

Bacon and Egger Dinner Salad

This was a wonderful salad. We added blueberries and tomatoes, and topped it with cheese. I used Italian dressing, but my husband liked the mayo better. Overall, it was fabulous. I'd recommend it to anyone!

Garlic Croutons

Lovely croutons! My husband and I loved them! We used whole-wheat bread, and I didn't have any butter, so I used olive oil. I added some italian seasoning and parmesan cheese, too....basically, I didn't do much by the recipe, but I used the basic technique. This is a very versatile recipe, and will be used often in our house!

Deluxe Waffles

I am making these waffles right now, and my husband and I just tried the first ones that came off the iron....they're the best we've ever had! I added 2 teaspoons of vanilla, and only used a teaspoon of baking powder. They really don't take a lot of effort to make, which is very good for us because I just don't have time to make really involved recipes. This is now "our" waffle recipe!
