Shaped Vanilla Cookies
Not too sweet, perfect soft texture, and wonderful taste! I upped the vanilla to 1 tablespoon (3 teaspoons). I also used whole wheat flour but I always do that :D

Berry Oatmeal Muffins
Turned this into a loaf instead of muffins, and it was SO GOOD! I had to turn the temperature down to 350 but that may just be for a loaf. I was out of wheat germ so I used flaxseed meal instead, and I don't think that changed the flavor much. I also used whole wheat flour because that's all we ever use. My 8-year-old and 2-year-old loved it, my husband and I loved it, and I love that it's so healthy with the smaller amount of sugar and the whole grains :D

Blackened Salmon Fillets
This is our go-to recipe for salmon, now that we have a cheat to make it cook up faster: instead of sauteeing each individual fillet in butter in a skillet, I lay them all out on a baking sheet, slather with butter, and pour the spice mixture on. And for my kids, I pour on a LOT less of the spices! I usually am able to get a lot more than 4 fillets out of one batch of spices :D We like this served with brown rice and roasted squash.
