Buttermilk Cookies

good tasting, cakey yes but I expected that after reading the reviews. I added some almond extract along with the vanilla and sprinkled lots of colored sugar. I refrigirated the dough for about an hour to minimize spreading and it worked pretty well. I'd make them again but maybe add nuts or choc chips.

we used fat free products due to some diet restrictions, a little freezer time would've helped with consistency but HOLY COW this was yummy. Will be making again for sure.

Black Bean and Corn Salad II

made some personal preference changes but this was soooooooo good. We've had it twice and even the baby likes it. Goes very well with light meal of fish or grilled chicken.

Day Before Mashed Potatoes

I make this all the time. Try adding, chopped cooked bacon, chedder cheese and chives. Or even simpler use chive and onion cream cheese and skip the onion powder. YUM These are a staple for Sunday night dinner.
