About this Cook
26 year old, married, and interested in natural health/healthy living. In 2007 I found out that I am lactose intollerant so I have been forced to adjust all of my cooking to be dairy-free, it can be a challenge but it is still always delicious. I typically use a recipe as a guide only. My measuring and ingredients are not usually exact, I really dislike following things to a T.

My friends consider me a creme de menthe bar expert. I love making beautiful pies. Because of allrecipes, I have finally figured out how to make the specialty breads that are expensive in the store (French, Focaccia, Ciabatta) this has saved me a lot of money and impressed my friends and family!
My cooking tragedies
The classic pork chop tragedy and many dinners have turned into take-out...I am definitely more of a baker than a cook.

Finnish Cookie Sticks
A lot of work but worth it! I used non-hydrogenated palm shortening instead of butter to make the cookies dairy-free and they came out tasting great. I didn't have almonds so I used walnuts, pecans and macadamia nuts instead (individually) and my favorite was the macadamia nuts. YUM! Thank you!

Ciabatta Bread
I love this recipe, thank you for sharing it! It is perfect. By using the bread machine it's easy to make. Before taking it out of the machine I spread olive oil over my hands and the spot where it is going to rest and I have few problems with it sticking. Also, I just make one large loaf instead of two smaller ones. You must mist during baking to get the perfect crust.

Creme de Menthe Bars
Wonderful recipe, Thank You Deirdre Dee!!! I made these bars years ago and it has been my holiday specialty ever since. I had a rule of only making them during the Christmas season but since my boyfriend has tried them I've had to tweak that rule a bit. I took a chance this summer and tried Disaronno (an amaretto liqueur) in place of the Creme de Menthe...YUM!
