Baked Oatmeal II

I left out the craisens and halved the brown sugar. I also used applesauce instead of butter to make it healthier. It was SOOO good! A great way to get my kids to eat fiber and a easily portable healthy snack. I will probably make it in an 8x8 next time as the 9x13 made it quite thin and it was done after only 30 minutes.

Big Soft Ginger Cookies

I have to try making them again following the recipe exactly but this time I tried using all applesauce instead of butter and they turned out great but very cake-like. I think they could use more spice as well for added flavor which is why I gave them a 3. The texture and puffiness could have been from not using butter but the flavor wasn't very strong.

Marshmallow Fondant

so easy! I was terrified to try making a fondant cake but this was so easy. I used Crisco and added the food coloring before adding the sugar. After leaving it in the fridge overnight I did microwave it to get it up to room temperature faster as I was getting impatient. Now I need to master covering a cake without showing the folds on corners.

Chocolate Covered Cherry Cookies II

I made these just as the recipe says except that I used half whole wheat flour and half white flour. These are my new favorite cookies!!!! I put the chocolate icing on before as well as after baking and they are so gooey and very chocolaty.

Pumpkin Gingerbread

So yummy! Even my kids loved it! I made it just as the recipe says (minus a cup of sugar because that's just insane to have almost as much sugar as flour) and then I made it again using applesauce instead of oil, egg whites instead of whole eggs, 1 cup less sugar, and the flour half whole wheat half white. It turned out GREAT both ways!

Monkey Bread II

This was my first time making monkey bread and it was much easier than I thought it'd be. I used 2 cups of whole wheat flour and 1 cup of white to make it a little healthier. I also used half the amount of butter and sugar and still had enough. Next time I will dip the bits in butter and then roll in the sugar though as I think that will more evenly spread the sugar throughout it.

Strawberry Muffins

I used whole wheat flour and applesauce instead of oil. I made one batch with the strawberries chopped but they just oozed juice while baking and made them so ugly with brownish liquid all stuck to the sides. For the 2nd attempt I pureed the strawberries and it made them much prettier and the taste was great but the texture was a little gummy in the middles even after cooking for extra time.

The Best Banana Bread

I used 100% whole wheat flour and applesauce instead of margarine and it turned out AMAZING!!!! I think I can even try cutting back on the sugar next time. This recipe is a keeper!

Chocolate Peanut Butter Cups

these are amazing!!! I made them in a little reese cup shaped candy mold and they are perfect. I did a mixture of milk chocolate and semi sweet chips because that was what I had and they are so much better than real Reese cups. I love that they are gluten free too!

Baked Teriyaki Chicken

so yummy! I didn't have any vinegar so I left that out and I used chicken breasts instead of thighs. I will be making this often now. I didn't use foil to line the pan and will be regretting that later!

Cola Cake

I used a white cake mix and a can of diet Sprite. I did add one egg white just incase and it turned out perfectly! It was a huge hit at the party last night and no one could tell anything was different. It saved about 50 calories per cupcake which is well worth it to me!

Pretzel Turtles

These are super easy and highly addictive! I used rollos and they are so good but the dove chocolates probably squish prettier because of their shape. I will be making these for every get together this Christmas and they will make great teacher gifts!

Oat Applesauce Muffins

very good muffins! I used paper liners though and half of each muffin wouldn't peel off of the paper. I added cinnamon and vanilla to mine to give them some flavor. Next time I think I'll add some grated apple too. I'm going to add flax too for some added fibre.

Oven Stew II

This is the best stew I've ever had! It definately didn't have enough liquid for me though so I doubled the amount of water. I also used all frozen veggies except the potatoes. I also used cut up marinating steak instead of the stewing beef to cut out some of the fat. I also didn't have stewed tomatos so I used canned diced and it worked well.
