Fluffy Two Step Cheesecake I

Other cheesecakes I've made call for lemon, so I added a packet of True Lemon and a small amount of vanilla. Taste is amazing and so easy! Next time I'll try the 2 pkgs of cream cheese.

Eggnog Pancakes

I also had trouble getting them to cook through without burning. Added some milk to make the batter thinner, and omitted the sugar and added cinnamon. I love the idea of eggnog pancakes and they taste great!

Baked Potato Soup

Very good recipe, but thought the basil was a bit too basily...will cut it by half next time or try dill. Also mashed it a few times to make it a little thicker.

Sausage Gravy

I did the bacon version after cooking some bacon....it turned out great! The bits from the pan made it color up really nice. I put cayenne pepper in with the roux, I think it helps with the flour taste. I've also heard that cooking the roux for at least the five minutes is important to not get the flour taste. Probably why grandma burnt hers a bit on purpose!

Grandmother's Buttermilk Cornbread

Just made this to go with chili, it is very good. I didn't have buttermilk so I used half and half(we need fat & calories in this cold!) It was a little dense, but moist. And I baked it in a cast iron skillet so it had that nice crust.

Bottom Round Roast with Onion Gravy

This is excellent! I was a little worried about the onions carmalizing. After I got it simmering and put the lid on, they were still raw looking and it really smelled of vinegar. But my lid wasn't on tight, the liquid went out and voila! carmalized onions. I added a little water and it became the nice dark color it should be. Next time I'll leave it on high till the onions are carmalized, probably what I should have done the first time!!

Down Home Macaroni and Cheese

This is excellent! Every time I've tried homemade mac & cheese, the sauce separates and looks like cottage cheese. I added a bit of cayenne pepper, white pepper and dry mustard to the roux. And it was very good reheated in the microwave.
