Gnocchi with Sage-Butter Sauce

One of my go-to recipes. It's super easy, and it tastes great. With a hubby who won't eat seafood, it's perfect for Fridays during Lent when we can't eat meat.

Mexican Goulash

The best part about this recipe is how adaptable it is based on what you happen to have on hand. I have found that the amounts listed in the recipe are really just suggestions -- add as much or as little of any of the ingredients (if at all) as you want. I used 1 lb ground beef, 1 lb of Velveeta, and 1 lb of elbow macaroni. I didn't have beans, so I used some of the Trader Joe's Cowboy Caviar in there, which added some spice and color. You can't screw this up!

Easy Honey Mustard Mozzarella Chicken

I thought it was pretty good; hubby didn't care for it. It has a very strong and unique flavor, but it was very sweet so I'm glad I only used 1/2 cup of honey instead of 3/4. I also followed the comments and mixed the honey and mustard before putting it on the chicken, which was definitely a good idea. I don't know that the cheese really adds anything, so if I made it again, I'd probably leave it out. No need for the extra calories when it is overpowered by the sauce anyway.

Chef John's Macaroni and Cheese

I have made this recipe twice now. The first time, I made it exactly as the recipe stated, using the full amount of thyme, which was WAY too overpowering. The second time, I doctored it a little bit and I used 1 lb of Velveeta instead of cheddar and doubled the topping. I cut the thyme in half and it was still too overpowering. Next time, I won't use it at all. The cayenne pepper is a nice touch, but my hubby found it a bit too spicy, so I'll probably cut that in half next time. Overall, good potential but requires some fine-tuning.

Garlic Chicken

I can't, for the life of me, figure out why the ratings are so high for this chicken. Yes, it was very easy to make, but there is nothing special about this recipe (I followed the recipe exactly), and I probably won't make it again. I guess it's not that it tasted bad... it was just boring. The leftovers were soggy and not very good, so if you make this, make what you need and don't make extra.

Garlic-Lemon Double Stuffed Chicken

This is the one thing my husband requests for dinner all the time. Big hit, and he's a picky eater so he's hard to cook for! I only had shredded cheddar, so I stuffed that in instead of a slice. Still comes out great.

Baked Ziti III

This was very good! I did what other people suggested and mixed the sour cream with the noodles. It was pretty easy to make, but I wish I would have used a bigger baking dish or packed the noodles down more. I used less sauce than was called for (about 36 oz) and everything was still overflowing in my oven.

Simple Stromboli

Overall, very good. The egg white and Parmesan cheese on top made it taste almost like a pretzel bread. Next time, we will probably substitute pepperoni for the ham and add a little bit of Alfredo for some extra moisture to balance out the crunchy shell. --UPDATE-- After making this countless times, Hubby and I finally have figured out exactly what works for us. We always make extra, too, since the leftovers are outstanding. I prefer to fill mine with shredded mozzarella, salami, and turkey pepperoni. Hubby fills his with shredded mozzarella, salami, pepperoni, and Italian chicken sausage. Really, you can't mess this up and you can make it however you want.
