Dynamite Halibut

This was great! My husband ate this over about 3 days to polish off the leftovers. This is DEFINITELY going into my kitchen "sure-things" list. The only things I did different were to leave out the mushrooms and chop the onions instead of slicing.

Tomato Chicken Parmesan

Turned out great! Tasty and very filling chicken parm for 4 adults and 2 small children. I didn't pound the breasts out to even thickness (this time), but I definitely will next time. This was a snap! Thank you!

Spanish Flan

The only issue I had with this was the amount of liquid in my pie plate; cleaning the bottom of my oven was not pleasant! :) However, the flan was delicious and got a good response from my family on Mexican theme night. I'd make again but maybe pour individual ramekins of flan instead of using my pesky pie plate.

Award Winning Soft Chocolate Chip Cookies

Delicious! These turned out absolutely perfect. Using one vanilla and one butterscotch pudding box, they came out perfectly golden brown and stayed fluffy and soft in the center instead of collapsing like I've seen come cookies do. I will definitely be adding this to my collection of successful recipes! Thank you!

Cream of Sweet Potato Soup

Delicious! Slightly sweet, creamy, and delicately flavored. This was a hit at dinner last night with my boyfriend and can't wait to serve this at Thanksgiving dinner! Thanks for an EASY and yummy recipe.

Banana Sour Cream Bread

So delicious! I decided to make this and use up some bananas that were sitting around on the kitchen counter. I did a few things different than the original recipe: I heated the oven to 350 since I like a nice soft cake-like center and a slightly crispy, toasty brown outside, and this is usually the temperature I use to achieve that; also, I only have one loaf pan so I used a muffin tin, 1 9in round, and my lonely single loaf pan. I didn't think about quantity until I saw how HUGE the bowl was when everything mixed together. Glad I had a few different pans on hand! I filled the muffin pan and put it in first, followed by the 9in round, then the loaf pan. I left them in the oven for 15 min until the muffins were done and took those out, added another 15 for the round pan to finish cooking and pulled those, and finally another 20 for the loaf pan. So easy and sooooo good!

Tomato Bisque II

This bisque turned out absolutely amazing! I omitted the bay leaf and used chopped fresh basil towards the end of cooking, and substituted non-fat half and half for the milk. Wow, this was just so yummy! My boyfriend (not the biggest fan of tomatoes) thought it was delicious as well. :)

Easy Apple Strudel

So quick and SO EASY! Turned out beautifully golden brown, with just the right amount of crispiness to the layered pastry. Didn't have the apples to make homemade filling (and too much sugar in pie filling for us!), so I made some low-sugar black cherry preserves and used that for filling instead. I've never baked with puff pastry before, but I can't wait to try a savory recipe with the remaining pastry package in the freezer.
