So delicious! I decided to make this and use up some bananas that were sitting around on the kitchen counter. I did a few things different than the original recipe: I heated the oven to 350 since I like a nice soft cake-like center and a slightly crispy, toasty brown outside, and this is usually the temperature I use to achieve that; also, I only have one loaf pan so I used a muffin tin, 1 9in round, and my lonely single loaf pan. I didn't think about quantity until I saw how HUGE the bowl was when everything mixed together. Glad I had a few different pans on hand! I filled the muffin pan and put it in first, followed by the 9in round, then the loaf pan. I left them in the oven for 15 min until the muffins were done and took those out, added another 15 for the round pan to finish cooking and pulled those, and finally another 20 for the loaf pan. So easy and sooooo good!
