Chicken Suiza Cornbread Bake

This is a great recipe. Quick and easy to prepare. The only change I made was to use a cooked chicken. Family really enjoyed it, serve with a side salad. Very filling.

Easy Batter Fruit Cobbler

This was so easy that I didn't think it would be very good. But I was mistaken. It was excellent. I used fruit from my fruit bowl, nectarines, plums, peaches, blueberries. Served with fresh cream, it was quite rich but not greasy or stodgy at all. Son loved it. I will make this agin.

Bayou's Mardi Gras Slaw

Great coleslaw! The dill adds a different dimension to the flavour. Good idea to eat it all in one sitting as it does become soggy very quickly. However, if you can use it all in at the one meal it is very good.

Easy Omelet in a Bag

Great for camping. Quick, simple and nourishing. Checked out the zip loc site re: toxicity of the bag. To be honest you would have to eat a lot of food, cooked in the bags to be affected. No BPA's or dioxin. I will still cook this way. If you can microwave in it, it's OK. Sometimes I think there is too much scaremongering about cooking methods and different foods.

Greek Stuffed Zucchini

It was quite tasty, but a little dry. Maybe it was the meat I used. It had very little fat in it. Husband enjoyed the unusual flavour of the mint in such a beefy dish. Easy to prepare for an evening meal.

Russian Beet and Potato Salad

Great recipe. I used mayonnaise instead of the vinegar and oil and added some finely sliced dill. It was excellent and everyone cleaned their plate!

Sausage Rolls

I used puff pastry and fresh pork sausages. Very Tasty and quick to make. I think a lot depends on the type of pastry and sausage you use. Batter quality gives a better result.

Mexican Bean and Rice Salad

This was delicious. I used fresh corn instead of canned (just because I had it in the fridge). Everything else was exact. Great family salad, very healthy. Rice adds body and fills you up, beans are so good for you. Lovely fresh flavour.

Kansas Baked Beans

After paying $13.00 for baked beans in a cafe, I decided to make my own. These tasted better than the cafe beans and were a fraction of the price. Great for breakfast or lunch. Also good with ribs at a BBQ. I didn't have any beef and left it out, still was great and very filling.

Lemon-Blueberry Trifle

We make a trifle a lot in Australia and this is one of the best. Followed the recipe to the letter, but I garnished it with fresh blueberries and toasted slivered almonds. My guests all had at least 2 helpings (one had 3).... Very rich but oh, so delicious.

Out of this World Turkey Brine

This was excellent. First time I have used a brine and the turkey was moist and tender; even the next day the leftovers were great. There was no need to season the bird before cooking, it tasted perfect.

Krystal's Perfect Marinade for BBQ or Grilled Chicken

Sensational! Followed the recipe to the letter and it was fabulous. Not too salty or too sweet. Marinated 4 poussin (small chickens) overnight and baked them for 40mins. Absolutely perfect.

Southern Spicy Fried Chicken

This was the best and crispiest fried chicken I have had. Better than any restaurant. The chicken was moist and the coating did not come away in the pan. I cooked it in my grandfathers cast iron chicken fryer with a mixture of vegetable oil and duck fat. The flavour was amazing. Even the leftovers tasted great.

Smiling Caprese Salad

Excellent salad. I did change it a bit though. I made the dressing as a basil pesto. Anchovies were substituted for salt and I added a little lemon juice as well. The dressing was then drizzled over the salad. It was a great hit,

Beef Burgundy II

A beautiful Beef Burgundy. As good as I have had even in France. The meat was very tender, it also pays to use a good wine. I used the same as we were drinking with the dinner. Instead of adding the potatoes I made a creamy mash and it went extremely well with this dish. You will enjoy this dish very much.

Pistou Soup

This is an absolutely fabulous soup. The garlic in the basil pistou adds a real kick, almost like chilli. You can also change the vegetables to what you have in the fridge and I omitted the pasta and potatoes (husband is on a low carb diet). I added turnip, broad beans and only added one can of white beans (all I had). Filling as a meal (2 bowls) or a great first course. Serve with fresh crusty bread...yum.
