Cilantro-Lime Dressing

Tangy and fresh flavoured dressing. Have used it on many different salads. Does not keep well overnight, so use it all at once or make less if required. Very good.

Easy Omelet in a Bag

Great for camping. Quick, simple and nourishing. Checked out the zip loc site re: toxicity of the bag. To be honest you would have to eat a lot of food, cooked in the bags to be affected. No BPA's or dioxin. I will still cook this way. If you can microwave in it, it's OK. Sometimes I think there is too much scaremongering about cooking methods and different foods.

What a fabulous salad. So refreshing. I didn't have any garbanzos so I used white beans. They were a good substitute. So easy to make and such a zingy flavour. 100%.

Beet and Cucumber Salad

Great basic recipe. At the risk of being jumped on by the 'review police', I did make a few changes to suit my family's palate. Mixed it with smoked trout and a touch of horseradish. This then became a light meal for lunch, not just a side. Good recipe, easy to prepare and very tasty.

Fisherman's Pie

Great recipe. Very tasty. I sliced my potatoes instead of mashing them. Turned out beautifully. I also added some shrimp and scallops too make it a bit special, but it isn't really necessary as the pie is so tasty even without the high cost additives. Whole family loved it.

Sicilian Steak Sandwich

This was FABULOUS. What a flavour! One of the best sandwiches I have ever made. I used parmesan bread as I didn't have any rolls and toasted it, sensational. It was so good I forgot to take a photo. Must be why there is only one...everyone is too busy eating!

Fresh Fig Cake

I changed the recipe a bit and made it into an upside down fig cake. Followed the basics of the cake recipe. It turned out beautifully. Served with fresh clotted cream.....delicious.

Paddy's Chile Verde

We don't have fresh tomatillos in Australia, so I had to use canned. I also didn't have lager so I used beef stock. A few little changes but not too many. It was fabulous! I served it with a bean and avocado salsa and brown rice. Husband loved it and took the leftovers for work the next day. Great meal to do in the slow cooker, absolutely delicious.

Italian Cassata Cake

Very authentic cake. Ricotta is the traditional cheese to use and adds a special flavour and texture that you do not achieve with cream cheese. I added some extra Italian Glace fruit - cherries, Clementines and figs in the mix and also for decoration. Pistachios also added an extra crunch. You only need a small slice so this cake easily will feed 12 to 15 people. Great for a special occasion.

Smiling Caprese Salad

Excellent salad. I did change it a bit though. I made the dressing as a basil pesto. Anchovies were substituted for salt and I added a little lemon juice as well. The dressing was then drizzled over the salad. It was a great hit,
