Zucchini Yogurt Multigrain Muffins

These were the best muffins ever!!! The only thing I changed was to put 1 1/4 flour and 1 cup whole wheat flour. The muffins came out sweet so next time I'll cut down on the sugar. Not that being sweet is a bad thing:-)

Sausage Casserole

This was a huge success at my Bible Study Brunch! Every lady came back for seconds! Three things I did differently: 1. I baked the hashbrowns with peppers and onions for about 30mins before hand. 2. I used maple flavored sausage. 3. Used 9 large eggs. I think my casserole took a little less than an hour to cook probably because the pan we already heated from baking the potatoes. This recipe is a REAL WINNER!!

Bacon Wrapped Chicken

I followed the advice of others and cooked the bacon before baking, added sour cream instead of mayo, and I put sharp cheddar instead of cream cheese in a few. LOVED IT! LOVED IT! LOVED IT! Just as a personal preference I liked the cheddar better. Served it with some brown rice and spinach salad and it was the best, most romantic meal I've ever had with my husband.

Easy and Delicious Chicken and Rice Casserole

I really like this versatile recipe. I, of course, changed a few things in the basic recipe. First of all, I used 1 ½ cups of rice. Then I added 1 can of cream of mushroom and 1 can of cream of chicken soup to 2 ½ cups of water. I followed the recipe from there. After baking for one hour, the chicken was done but not the rice so I stirred the rice, soups, and onion soup mix together and put it back in the oven for another ½ hour. Ten minutes before it’s time was up, I added some fried onions to the top of everything and took the foil off for the remainder of the time. The chicken was very slightly tough but the rice was perfectly flavored and moist. We loved it! My husband likes sharp cheddar so he added some to his chicken and rice mixture. Next time I think I’ll add some mixed veggies and see what happens. All in all, a VERY easy recipe that tastes quite good and you can pretty much work it any way you like to suit your own personal tastes. This is the type of recipe that is impossible to botch so have fun with it and be as creative as you want!

Wild Rice Casserole

This dish baked beautifully! I used spicy sausage and cubed chicken and sprinkled french onions on top. Very filling on a cold winter's night. And my husband loved it!

Cola Pot Roast II

Cajun Dirty Rice

This recipe is so yummy! My family loves it and the only change I make is to add spicy sausage. Serve it with warm cornbread and you've got a wonderful meal for a cold winter's night!

Bill's Sausage Gravy
