Brooke's Best Bombshell Brownies

These were fantastic! They had a great chewy texture. I used half white sugar and half brown sugar and substituted orange-flavoured dark chocolate (Green and Black's Maya Gold) chopped into small pieces for the chocolate chips, which worked really well.

Shepherd's Pie Mexicana

I liked this more than classic shepherd's pie - it was tastier and more interesting. I made a few changes. I halved the peas and corn, added a can of kidney beans, doubled the taco seasoning and left out the spicy salt and put grated cheddar cheese on top of the mashed potato (strongly recommended!).

Zesty Porcupine Meatballs

My first and only other experience with 'porcupines' was at a summer camp I went to. I'd been remembering them and wanting to recreate them, so I searched for recipes and found this one. It tasted a lot like the porcupines I remembered, but looked a bit different - the ones I had had more rice 'spikes' and looked more porcupiny. Maybe they were rolled in rice before being cooked? I left out the egg because my daughter is allergic, but the meatballs still held together really well. I substituted celery salt for the garlic salt and found the celery flavour a bit strong - will use garlic salt next time. They tasted great. I served them with mashed potatoes, sauted mushrooms, peas, corn and carrots.

Perfect Pumpkin Pie

Asian Tuna Patties

These were great! I'd been looking for a tuna patty recipe but most of the ones I'd found sounded bland. These weren't bland at all, especially since I added a finely chopped red chilli to the mix. I also substituted hoisin (Chinese BBQ) sauce for teriyaki sauce. The patties held together nicely. I served them like hamburgers, with tomato, lettuce and ketchup.

Chocolate Trifle

I had high expectations for this dessert because of all the rave reviews it had received, but found it didn't live up to the hype. I liked it, but found it a bit too dry and too sweet, without enough variety of flavours. All in all, I prefer a traditional English trifle. Update: I found this is much yummier served warm with ice cream. One minute in the microwave does the trick. That way, it tastes more like a chocolate pudding.

Tater Tot Hot Dish II

I heard about hotdishes during a message board discussion of regional foods and was curious to try one, so I came here in search of a recipe. I liked this one. It didn't look terrific, but it tasted good. Definitely comfort food. I couldn't find cream of celery soup, so I used two cans of cream of mushroom instead. I also added grated cheddar cheese between the meat and the tater tots (which are known as potato gems here in Australia). With so many salty ingredients, there's definitely no need to add any salt to this dish.

Smoked Salmon Vodka Cream Sauce

This dish is a winner! I made it for my husband on Valentine's Day and both of us really enjoyed it. It didn't taste overly fishy and the vodka and cayenne pepper made the sauce interesting without overwhelming the other flavours. I had no problem burning off the vodka. It was quick and easy to make. Thanks for the recipe!

Serbian Ground Beef, Veggie, and Potato Bake

This was fairly good, but not as good as many of the reviews had led me to expect. The meat mixture was a bit dry for my taste. If I make it again I'll use more potatoes and perhaps add some crushed tomatoes to the meat mixture.
