Oven Fried Chicken II

We really enjoyed this recipe with the following revisions: I sprayed the pan liberally with Pam then used 1/4 cup of oil. I added a garlic/herb seasoning to the bread crumb as well as some red pepper flakes. After laying the chicken pieces in the pan, I sprinkled a little cayenne pepper over them. I baked for 30 minutes at 375 and 25 minutes at 400. They were delicious!

Chicken Satay

Excellent...prepared this for the first time for my stepdaughter's lingerie shower along with a broccoli rice stir fry. The peanut dipping sauce was yummy and a big hit among the ladies. I was pleasantly surpried to see how easy this was to prepare...I had never made anything before like this. The prepared chicken was easy to thread onto skewers and made for a pretty presentation.

Mini Cheesecakes I

This was excellent and can easily be made ahead by one day. I didn't put the cherry pie filling on top until right before the party. The recipe made 36 mini cheesecakes for me. Will definitely make this again for get-togethers, etc... You don't need the whole box of vanilla wafers (less than half will do and I still had leftovers) and I crushed them using my blender. I did bake them using the mini liners. I also followed the cheesecake tips and set the baking pan in a jelly roll pan that I filled with boiling water. None of the cheesecakes cracked!

Broccoli and Rice Stir Fry

This was very good. I only made one change and added additional soy sauce to it once it was made for a little more flavor. I made it for my stepdaughter's lingerie party and it was a hit!

Baked Dijon Salmon

We are trying to eat more fish (at least 1x/week) and I found this with the wonderful reviews. I followed the recipe with the exception of the bread crumbs...it was a big hit for our family and we will make it a regular recipe in our household.
