Beautiful Salad

Reviewed: Nov. 28, 2014
This was a very easy dressing to make with simple ingredients readily available. I use 1/4 c of sugar and still think the dressing is too sweet. It is also a very thin dressing. I was not planning on making this again, but my husband said he liked it -- so I guess we'll try it again. Thanks for the recipe.

Roasted Butternut Squash Soup

Reviewed: Oct. 9, 2014
This is a yummy soup. Everyone in my family loved it. We made it after receiving an abundance of squash from our CSA and served it with fresh apples and hearty bread. I was hesitant to use cinnamon and coriander, but the flavors were really good. Even my extremely picky eaters ate it and proclaimed it 'Good'. update: I have made this soup several times -- each time the result was different but still yummy. I think the amount of broth and seasonings will depend on the squash -- and now add until I get the result I want. I also cook everything in a big cast iron dutch oven, first on the stove then in the oven. I cook all the vegetables at the same time, and puree in the pot. Thanks for the recipe.

Pear Vinaigrette

Reviewed: Oct. 3, 2014
I wanted to like this dressing. I used fresh pears and moscato wine -- following the recipe exactly. I served on a red leaf lettuce salad with green apples, carrots, and feta cheese. The dressing is bland. I had to add more salt and pepper every time I served it.

Eat Michigan Salad

Reviewed: Dec. 25, 2008
This recipe is outstanding! I thought the maple syrup would make the dressing too sweet or give it an odd taste. Instead it is down right plain yummy. Thank you for sharing!

Delicious Ham and Potato Soup

Reviewed: Mar. 22, 2008
We had this soup for dinner tonight and it was wonderful, despite my mistakes. I used a combinationo of chicken and vegetable broth because that was what I had on hand. I followed the advice of others and did not add salt.... mistake # 1. I think because I did not use bouillon it needed more salt. My second mistake was letting it cook longer than stated in the recipe. The potatoes were too soft. Next time, I will use broth, but otherwise follow the recipe directions more closely. Thanks for a great soup.

Balsamic Tortellini

Reviewed: Feb. 21, 2008
This was a really good fast meal. I wanted to use ingredients I had on hand, so I substituted ham for pancetta. I also sauted a clove of garlic and sliced mushrooms with the onion and ham. I added some frozen peas to the saute mixture just before tossing in the tortellini. The balsamic vinegar added a nice crisp taste. Thanks for the recipe.

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

Reviewed: Feb. 21, 2008
This meal was easy to prepare. I liked the crunch and flavor provided by the corn torilla crust, lime and chipotle peppers. My husband and daughter did not like the avocado sauce. If I make this again, I will make guacomole or an avocado salsa instead. Overall this meal was healthy, easy to prepare, and tasted pretty good. Thank you for new way to prepare tilapia.

Deb's Cranchick Salad

Reviewed: Mar. 2, 2007
I made this recipe this evening to give to a friend who just came out of the hospital. The salad tastes great. It looks, however, disgusting. The salad is a pasty mud colored mixture. I added extra cranberries and some apple, hoping to have distinguishable color, to no avail. I also used roasted chicken instead of the sauteed chicken breasts If you make this, be prepared for an off-color salad. I think I will try this again using white wine vinegar or tarragon vinegar instead of balsamic.

Sweet Potato Casserole II

Reviewed: Nov. 25, 2005
My husband made this yesterday. I have never liked sweet potatos with mashmallows, but these potatos were good. Sweet potato size varries greatly... we used 3 pounds and it worked great. Thanks for your recipe.

Maple Roast Turkey

Reviewed: Nov. 25, 2005
We made this yesterday and received a lot of compliments. It was fairly simple to prepare and the house smelled wonderful. The butter took longer to make than I estimated; I'm glad we made it in advance as suggested. I prepared half the gravy with the brandy and half without... everyone preferred the gravy without the brandy. The brandy was the most expensive part of the meal ($29.00 for a pint) and the most difficult ingredient to locate. If we make this again, we will not use the brandy.

Hazelnut-Mushroom Pilaf

Reviewed: Dec. 21, 2004
This is a very yummy and attractive side dish. We used sliced 'baby portabello mushrooms' which maintained a nice texture. The rice is easy to prepare and can sit unattended while you are preparing the rest of the meal or eating a first course. Thanks for such a good simple recipe.

Pork Medallions with Port and Dried Cranberry Sauce

Reviewed: Dec. 21, 2004
We made this recipe last night to test for Christmas dinner. It was very good and simple to make. We plan to make most of dish (prepare the meat and reduce the wine sauce) before we start our meal and let the final sauce reduce while we eat our salad. I'm not sure if I like the thyme.... we will be preparing the dish with orange rind in place of the thyme. The cranberries are very plump, yummy and festive.
