Apple Pie Muffins

The only changes I made in this recipe was to substitute 1 cup of wheat flour for A/P flour and added 1/2 cup of chopped walnuts. I also made it in a muffin top pan instead of a regular muffin pan. They turned out wonderful. Made 6 large muffin tops.

Best Bean Salad

I've made this for a few years now. I stick wiht the basic recipe exept I use red wine vinagar and use 1/2 cup sugar. To "spice" it up, I also add black olives, walnuts, and broccolit. I've takin it to partys and get togethers and that is now my dish to bring. Guess that says something about it.

Southern Shortcake

This recipe is like how my Mother and Grand Mother made them. And were all from Michigan! I followed the recipe exactly except I took a tip from Alton Brown. I put one cup of flour on the cupboard top and put the dough in that. I then kneaded the dough a few times till it was no longer sticky. Then I rolled it out, folded it into quarters, rolled it, folded it, rolled it folded it and put it in plastic wrap and in the fridge for an hour. I then rolled it out the last time to 1/2 inch thing and put the whole thing on a greased baking sheet. Like mom used to do. Comes out wonderful and you can cut the size of biscuit you want. People rave about this recipe and I have a lot of converts from angle food cake. (yuck)

Creamy Peanut Butter Fudge

Great recipe and very easy to make. Not to sweet and a very rich peanut butter taste. Make sure you have everything measured and ready to go because once you start it goes really quick.

Cathy's Peanut Butter Fudge

My mother gave me a peanut butter fudge recipe many years ago and my children lost it last year. So I searched all recipes and this one is the closest to hers. Very fast and easy to make. I like the fact there is no marshmallow creme. Very very good taste and creamy. My wifes bowling team all wanted the recipe. I use a probe electronic thermometer when I make fudge and it works much better than the 3 dollar candy thermometers. Exact temerpatures you can read everytime. Good Luck!
