Ham, Potato, and Cheese Soup
I scaled this recipe up to 48 servings for our lenten soup supper and it filled an 18 qt roaster to the brim. Got great reviews! We added the Velveeta when the soup was very hot and I think it melted too quickly. Would recommend turning the roaster down some before adding the cheese, just before serving. Thanks for the great recipe!

Slow Cooker Chicken Taco Soup
I served this soup at our Lenten soup supper at church and got wonderful comments! It is spicy but not too hot with the Rotel and can be kicked up if you like it that way! I scaled it up to 48 servings which made an 18 qt roasterful. I skimped some on the beans but probably didn't need to. I used the bulk taco seasoning from Sam's and added a little extra. Very good!

Jackie's Sausage Soup
Great flavor! We served this at our church soup supper and got great reviews. Would recommend Barilla orzo. We used a rounder shaped orzo and many wondered what kind of "seed" was in the soup?
